Meal Plans Week of 7-11-10

Posting from Grand Blanc today.  We're at my parents' house right now.  We had a blast yesterday with the whole family.  We're looking forward to one last trip to Good Shepherd Church this morning before they move to a new location.  This will be a pretty busy week for us.  Our garden is really getting going.  We've already had quite a few cucumbers and zucchinis.  And we're starting to get beans.  I'm preparing myself...there will be a lot of beans.  With all the rain and sun we've had our garden looks like it's on steroids this year :P  Let the bean freezing (and eating!) begin.  Aside from food stuff, this is my main IVF week.  So I'll have a couple Dr. appts. (not sure which days yet).  Hopefully I'll still be feeling ok.  So, today is church, lunch and head home.  Monday I think I'm going to stop by Hefron Farms (stock up on milk and butter) and Warren Nutrition (just see what they have).  Tuesday is a Dr. appt. and the farmer's market.  Wednesday I'll probably go to Meijer (or maybe see if I can skip a week?).  I'll probably have a Dr. appt. Friday.  But I'm just guessing.  It could be Thurs. or Sat.  So I'm leaving my schedule open right now.

Last week I didn't do too much in the kitchen.  It was just too hot.  I don't think I turned on the oven once.  But I can only do that for so long.  I'll have to use it this week.  I did make carob sauce and carob peanut butter.  So far my experiments with carob are going well.  I like having a healthy alternative to chocolate.  I froze some zucchini and made a batch of fermented punch.  And of course my daily kefir.  But that's about it.  It was nice to relax and give myself a little break after a crazy week in the kitchen the week before.  Still doing my best to eat fertility foods.  I had both eggs and lentils almost every single day last week :)  I'm happy to say I didn't use my microwave once last week!  This is turning out to not be as hard as I thought.  And I feel much better about what we're eating.  I have also cut way back on flax seed.  There is some in my homemade granola, but other than that I haven't been adding it to anything.

This week I have a fair amount of kitchen work.  Hopefully I'm up for it!  Like I said, our garden is really growing.  So I'll be freezing beans and zucchini.  I think the good blueberries will be in at the FM, so I'll be freezing a bunch of those too.  And maybe drying some.  Justin has a work lunch thing this week, so I'll be making peach blueberry cobbler for that.  I need to use some of my sourdough starter.  I think I'm going to try making crackers.  I have a few baking projects I'd like to get to, so I need to sprout/grind wheat.  We're almost out of graham crackers.  I'm sure Rebecca will be excited to make more of those.  And with all of this zucchini it would be nice to make zucchini bread.  We have some lettuce from the FM (and salad is a great no-heat meal right now), so I need to make more salad dressing.  Justin likes ranch, so I want to try making that.  And my SIL just gave me some water kefir grains.  I need to read up on how to use them and get started.  For meals my focus is still on fertility.  Plus I have some stuff that needs to be used up/I'm trying to focus on what's in season.  I have a bunch of eggs, homemade mayo, cream cheese, raw gouda, beans, zucchini, raspberries and cucmbers.  So we'll see what I can do with all of those.  Plus I want to be sure to get in some seafood and try liver!  I'm still researching how to prepare liver.  I'm excited to try it.

The final thing this week is the Naturally Knocked Up eCourse.  It starts tomorrow!!!  I'm so excited to keep learning.

  B - strawberry banana sourdough muffins, raw sugar snap peas, pineapple, blueberries
  D - deviled eggs w/ bacon, steamed beans (from garden!!), fruit, crackers w/ cheese

T (feed sourdough, Dr. appt., farmer's market, grind flour, make cobbler, make cracker dough, freeze blueberries)
  B - hard boiled egg cucumber w/ fermented bean paste (me), oatmeal muffins, peach (Justin)
  D - roasted corn tilapia, salad w/ cucumber, avocado and cheese

W (make crackers, saute zucchini, freeze beans and corn, Meijer, soak and cook liver)
  B - scrambled eggs, sourdough muffin (Justin), sauteed yellow zucchini (me)
  D - liver pate and chopped liver on sourdough crackers, cheese curds, steamed beans, corn on the cob

Th (make cream cheese dip, make ranch dressing mix, start water kefir, make graham crackers or zucchini bread?)
  B - apples, pineapple, grapes and blueberries w/ nut butter and cream cheese dip
  D - lamb and gouda burgers, grilled zucchini, grilled corn on the cob

F (Dr. appt., clean)
  B - fried egg, cucmber, avocado (me), cereal w/ banana (Justin)
  D - liver and onions, zucchini fries, roasted potatoes, egg salad

S (Dr. appt., clean, laundry, farmer's market?, make raspberry topping, freeze beans?, make graham crackers?, make zucchini bread?)
  B - leftover egg salad, grapes, blueberries, crispy almonds (me), sourdough english muffin, fruit (Justin)
  D - pan seared salmon, beans

  1. Ooh, sourdough crackers would be a good snack to take to CP, too... hmmm... might have to make those this week, as well! Thanks for the idea!

    Good luck with the liver - I'm anxious to hear what you think of it!
