Meal Plans Week of 8-15-10

We're back!  We had a great time in WI.  Justin and I even got to go out for a real anniversary dinner while Rebecca stayed with Grandpa and Grandma Voogt.  We had a great meal of asiago dip w/ pita chips, salad, broccoli, red skin mashed potatoes and kind crab legs!  Yum!  We got to see lots of animals on the farm...including our future pork :)  Aside from losing a couple pounds and being covered with mosquito bites it was a great vacation :)  We enjoyed time together and a break from the usual routine, but it sure feels good to be home.  So happy to be able to cook again :)  So many things to get caught up on this week.  We don't have much food in the house since I still have to go to the store (after being gone for a week...I have no eggs or yogurt!!  What am I supposed to eat? :P), but I do have a fair amount of produce to deal with.  Plans for this week will be a bit uncertain.  I have a Dr. appt. Tuesday morning.  That will determine if we're doing a transfer this week or next week.  If it's this week that will limit what I can do at the end of the week.  So I'll just have to see how things go.  But I'll be busy busy the first part of the week trying to squeeze a lot in.
Today we're just going to get caught up and readjusted to MI time.  Monday is grocery day.  Tuesday is Dr. appt. and farmer's market.  Wednesday I'll probably go to Target to stock up on a few things.  The rest of the week is TBD.  If necessary and time allows I could make a trip to Harvest Health, or there is a MOPS 2nd hand sale on Friday.  We'll see.

I have a lot I want to do in terms of food this week.  I need to get my kefir going again...once I have milk to make it :P  I should use my sourdough starter for something.  Not sure what yet.  I want to soak/dry peanuts, almonds and pumpkin seeds and use the nuts to make nut butter.  I also need to sprout/dry/grind wheat berries so we have some fresh flour in the house.  We have tons of tomatoes from our garden right now.  So I'm hoping to make and can spaghetti sauce and salsa.  I'd also like to try making fermented salsa.  My in-laws gave me a beautiful huge head of cabbage, so I can finally try making sauerkraut.  I need to keep working on freezing beans and corn.  If time allows I could make a new batch of mayo, but it's not critical.  I was thinking of canning peaches, but that will have to wait.  Just don't have time.  And peaches will be around for a while yet.

Meals this week will definitely be focused on fertility.  It's go time :)  I need to be eating as well as I possibly can.  Plus eating what's fresh/in season.  We got fresh peaches and pears from my in-laws (already had some this morning...yum!).  They also gave us onions and peppers (and the cabbage).  And eat to get my tummy back on track after a week away.

I'm sure this will be a crazy week trying to get caught up and squeeze a lot in.  Feels good to be home :)  Here's what's on the menu.

  B - crunchy granola bars (from freezer), fresh peaches and pears
  L - corn chowder (from freezer), crackers with cheese, fresh cucumber slices
  D - chuck roast in cp with red potatoes, carrots and onions, beans

M (make and can salsa, prep dinner, dry nuts, make kefir, Meijer, eCourse, chop fruit, soak pumpkin seeds, sprout wheat berries)
  B - apple slices w/ peanut butter, cucumber, granola bar
  D - cp split pea soup (combo of yellow and green peas) (with homemade chicken broth), sourdough bread


T (Dr. appt., fm, sprout and dry wheat berries, dry seeds, freeze corn)
  B - peach strawberry pear kefir smoothie
  D - corn pesto over grilled zuccchini and pasta, bacon, corn on the cob

W (chop veggies for spaghetti sauce, Target, make/can spaghetti sauce, make kefir, make almond butter, grind flour, make peanut butter, WT - Justin)
  B - blueberry muffins, banana (Justin), raw zucchini and tomatoes topped w/ corn pesto (me)
  D - leftover pea soup, bacon, sourdough bread

Th (make whey/cream cheese, roast beets, shred cabbage, make/can salsa, freeze beans)
  B - strawberry, pear, banana, peach avocado kefir smoothie
  D - grilled shrimp and bacon skewers, grilled tomatoes, corn-on-the cob

F (make saurekraut, prep picnic dinner, MOPS sale, clean, Holland beach)
  B - leftover pea soup (me), granola bar, fresh fruit (Justin)
  D - picnic at the beach - leftover roast beef on bun, almond butter sandwich, chips, raw beans and zucchini, roasted beets, fruit salad (w/ apples, peaches, pears, nectarines, plums)

S (clean, laundry, JB Zoo, make crackers?, ketchup?)
  B - leftover fruit salad mixed into kefir/yogurt, granola
  D - pan seared salmon, roasted red potatoes, onions, carrots and zucchini, cooked cabbage

    Sounds like you'll have a productive week. Have fun with all the new stuff!

    Good luck at the doctor this week!! We're praying for you!
