We made it through a crazy week last week. I felt like I had to squeeze so much into 1 week. At least we got to do some fun stuff. Rebecca and I went to the park, played with the neighbors a few times, went to the library, and we all went to the beach Friday afternoon. That was a fun family outing. This week will be much different. It's time for transfer (ahhhhhhhh!!!)! Which means taking it easy for me. Which sadly means I can't get as much done around the house/in the kitchen as usual. But that's ok. I'm focusing on more important things this week. Transfer will definitely dictate the whole week - meals and activities. I need to be eating as well as possible this week. I need lots of fertility foods (seafood, eggs, beef, veggies, butter, full fat dairy, etc.) and lots of good tummy foods. I'm thinking I'll be having lots of smoothies for lunch. As far as activities, today is church. Monday is grocery shopping in the morning and nursery cmt in the evening. Tuesday is transfer day. I haven't decided yet if I'll try to squeeze in the farmer's market before my appt. Beyond that I'm not planning much for myself. Just see how things go. Wednesday is co-op pick up day. Justin will probably do that on his own. He also has a meeting at church that night. If I'm up for it we might go to the zoo on Saturday since we didn't get to go yesterday (due to rain).
Last week I was busy in the kitchen. I made crispy almonds, peanuts and pumpkin seeds, almond butter, peanut butter, sprouted wheat flour, 2 batches of salsa (canned), 1 batch of spaghetti sauce (canned), roasted beets, froze corn and beans, cream cheese/whey, sauerkraut and mud balls.
I won't have things as planned out this week in terms of extras. I'll just have a list of possibilities and see how the week goes. In terms of canning at some point I'd like to do more spaghetti sauce, peaches and pears. I need to keep freezing beans. Our plants are still going strong. We already have 9 gallons in the freezer. I may have to give a few away if I can't keep up this week. I'm almost out of fermented ketchup, so I'd like to make a new batch. I need to use my sourdough starter for something. Not sure what yet. If time allows or if Rebecca and I need a distraction I could make crackers, bread, chewy granola bars and grain-free granola.

I am catching up on blogs. Looks like some great meals! Good luck with everything this week. Did you find organic peaches to can?
ReplyDeleteI just get my peaches from the same local guy as always. They aren't organic, but I trust their stuff.
ReplyDeleteDo you know what she sprays with? I'm just nervous about them b/c they're a dirty dozen, like #2 for 2010 I think. I've thought about maybe getting some from a local farm and doing some peeled, but I need to think about it more. I had talked to a few people at that WAPF mtg about it and they advised that still isn't a good idea, none of them are doing peaches this year. But I don't know if we can go w/out...
ReplyDeleteHonestly I don't know what he sprays with. I know peaches are on the list. We've been eating them fresh from the FM the last couple weeks.
ReplyDeleteMy thoughts...if you could only get conventional fruits/veggies...it'd be better to eat them than to not eat any fruits/veggies at all, right? And we don't eat that many peaches...a handful when they are fresh. And even the ones I can we eat maybe once every month or two at the most. I still have at least half of the peaches I canned last year. So I don't worry too much when we eat them that infrequently. If we ate peaches all the time then I'd be more concerned. But if I can one batch this year and we eat them every once in a while (like I said probably not even once a month) then I don't think it will have a huge impact on us. But we will get to enjoy some good tasting fruit that does have vitamins :)
