Meal Plans Week of 8-29-10

Is it Thursday yet?  No?  Only Sunday?  This will be a LONG week of waiting.  My test is on Thursday.  I know it hasn't even been a week since transfer, but it feels like an eternity of waiting.  I go back and forth between worrying that this didn't work to worrying that it worked too well.  But I'm doing my best to take it one day at a time and remember that God is in control.  So I don't have to worry.

A few things going on this week.  Today is church.  Tuesday will be farmer's market, and Justin starts his fall class.  So back to one night a week that Rebecca and I are on our own at dinner time.  Thursday is my Dr. appt., and I'm going grocery shopping.  Our plans for Thursday are a little bit TBD.  IF (big IF) we get good news we might do something to celebrate.  We'll see.  Friday I'll make a trip to Harvest Health.  Then Saturday Justin leaves for France!  He'll be there for a week for work.  Hopefully we can send him off with good news :)  Other than that just trying to stay busy and make the time go by faster.

Despite taking it easy last week I did manage to get some kitchen work done.  I made chicken stock, froze more beans (I think our beans are finally almost done...probably no more freezing...ended up with about 10 gallons in the freezer), made whole wheat crackers, grain free granola (been eating it every day...SOOOO good...I'll have to make more soon at this rate), fermented ketchup, sourdough granola muffins, raisins, chewy granola bars and wheat thins.

So far I've been doing quite well with healthy eating.  I've even eaten leftover fish for breakfast a couple times!  Trying to get in as much protein, fat and fertility food as possible.  Plus just enough calories in general.  Oddly enough I stopped exercising after transfer...and started bumping up fat, etc...and lost 3 or 4 lbs.!  Not what I expected or want.  So I have to keep eating!  My weight was back up a pound or two this morning, so that's good.  Hopefully my body is just working extra hard to grow a baby :)  The same meal focus will hold for this week...fertility foods and tummy friendly foods...for as long as I can stomach them ;)  Trying to really get a lot of protein and healthy fat.  And last week I hardly ate any grains.  I'm going to keep that up this week...just in case.

I have some potential extras for this week.  But we'll see how the week goes.  I would definitely like to make and can spaghetti sauce.  I've got a lot of tomatoes to use up.  I was thinking about canning peaches this week, but I think I'll pass.  I'm not supposed to do any heavy lifting right now.  And it would be a lot of work to get a bunch of peaches from the farmer's market to my kitchen.  We'll see if they still have good canning peaches next week.  If not I'll just skip it this year.  We still have a lot from last year in the pantry.  I would like to do some bread baking.  We don't have any homemade bread in the house!  We also used up the last sourdough english muffins last week.  So potentials for this week...sd bread, sd english muffins, ww bread.  Justin asked about peach pie the other day, so that is a possibility, but we'll see.  I'd have to do it at the beginning of the week.  I don't need a pie sitting around here when he leaves for France :P  I might also do another batch of mud balls.  We went through those pretty quickly :)  And we are out of dried apples, so I might make some of those.  Other potentials - freeze corn, make/freeze basil pesto (my basil is really going now!), dry herbs, freeze broccoli (if I end up going to a different fm this week).  I guess that's enough to keep me busy :)

  D - homemade ww pita w/ cheese (locally made marble and raw goat's milk cheddar) and summer sausage (locally made, no junk :), raw veggies w/ homemade ranch cream cheese dip, home canned pearsauce, tortilla chips w/ homemade salsa

M (make and can spaghetti sauce, eCourse)
  B - fried eggs, raw veggies, toast
  L - kefir smoothie
  D - catfish in tomato sauce, beans, oven potatoes

T (make sd bread, fm, class - just me)
  B - hard boiled egg, veggies (me),  breakfast cookie, fresh pear (Justin)
  L - kefir smoothie
  D - summer sausage, roasted brussels sprouts, cheese, fresh sourdough bread w/ butter

W (prep dinner, Meijer)
  B - sauasage links (locally made), brussels sprouts, beans, zucchini (me), toast and plum (Justin)
  L - kefir smoothie
  D - crustless quiche w/ bacon and veggies, beans, fruit, sourdough bread

Th (Dr. appt., hh, shopping)
  B - leftover quiche, beans, peas (me),  cereal (Justin)
  D - pan seared pork chops, mashed red potatoes, beans
  Dessert - turtle cheesecake

F (make smoothie, prep veggies for dinner, soak nuts, laundry, clean, Target, make ice cream)
  B - breakfast sausage, veggies, toast, fruit
  L - smoothie
  D - leftover quiche (me), grilled brats (Justin), roasted parsnips, carrots, zucchini, onions and peppers, fruit

S (dry almonds, soak pecans, make mud balls?, clean, co-op order, Justin leaves for France, chop veggies for chili sauce?)
  B - scrambled eggs, avocado, roasted veggies, marble cheese (me), sourdough pancakes w/ peaches (Justin)
  D - (just me) - spaghetti (w/ noodles for Rebecca, over raw zucchini for me)

  1. Hope your week goes quickly for you and praying for good news on Thursday! The meals sound good - we picked up some good, local summer sausage and bologna today at the fm, too.
