Meal Plans Week of 9-12-10

We made it through another long, crazy week.  So happy to have Justin home again.  And so thankful for another good test.  So far so good :)  Although this week will be slightly more "normal" we still won't see Justin very much.  He'll be gone every evening M - Th.  I have a few errands I want to run.  Not 100% sure which day I'll do which.  Here's tentatively what's going on this week.  Today is church.  It's Rebecca's first day in Little Lambs.  Our big girl has graduated from the nursery :)  Monday is either Meijer or Hefron Farms, and Justin has council all evening.  Tuesday is farmer's market and possibly Meijer or Hefron Farms.  Justin has class so he won't be home until late.  Wednesday is Kindermusik and possibly Meijer.  Justin has another meeting at church, so he'll be gone all evening.  Thursday I might make a trip out to Grassfield's/Green Pastures (where we might get milk) to check it out.  Justin has a classis meeting that starts around 4.  He'll be gone the whole day/evening.  Friday morning is our MOPS open house.  Rebecca and I will probably stop by to say hi and see her new room for this year (she'll actually be in a class instead of the nursery).  No set plans for Saturday yet.  I think I'm going to skip the cheese class for now.  We might go to the orchard to get apples and pears to start making sauce.  But we'll see.  I'm sure Justin has a lot of yard work to catch up on.

I didn't do a lot of kitchen work last week.  I just couldn't manage having piles of dishes to do after getting Rebecca in bed every night.  I've been way too tired for that, and needed to get to bed shortly after putting Rebecca to bed.  Looks like we missed out on peaches this year.  Oh well.  We've still got quite a bit from last year.  I did make crispy almonds, pecans and walnuts, grain free granola, chocolate graham crackers, mayo, and a peach pie.  The pie is in the freezer.  Maybe we'll bake it today.

This week I'd like to make/can a batch of chili sauce.  And depending on how many tomatoes I have left maybe doing one more batch of spaghetti sauce.  I didn't get around to drying apples last week, so I want to do that.  I might actually try my cast iron skillet this week and make corn bread.  We'll see. Maybe I'll freeze some veggies, depending on what I find at the farmer's market.  I don't have anything else specific planned at the moment.  But I'm sure things will come up.  And if I'm not too busy in the kitchen maybe I'll have time to continue my healthy eating/lifestyle series :)

I did call Green Pastures this week to ask some questions about raw milk, their farm, a herd share, etc.  I got lots of good info.  Hopefully Rebecca and I can go there soon.  And maybe make a trip with Justin some time too.  In terms of the milk...we'd LOVE to get it.  But we still have to decide if the drive is doable every week.  Coopersville isn't exactly just down the road.  It's actually very close to Justin's Uncle (where we get our beef).  So we'll see how the trip goes this week.  And go from there.  One thing I did realize is how affordable raw milk is.  So that's an extra bonus.  I was fortunate enough to finally at least taste some raw milk yesterday.  My SIL brought some over.  YUM!!!!

Meals this week will continue to focus on eating for pregnancy/1st trimester.  And as always easy and gut friendly.  So far I'm doing well with eating.  A few rounds of nausea/upset stomach.  But I keep eating :)  We're approaching 6 weeks, which is usually when things really get going.  So we'll see how I'm doing by the end of the week.

Other than that all I have to say is BRRR!!  It went from 90 to 50 in one day I think.  Hopefully we still have plenty of warm fall weather to come.

That's about it.  Just trying to get through another busy, tiring week.  And so anxious for our first ultrasound next week!  Here's what's on the menu:

M (chop fruit for smoothie, prep veg. for dinner, chop veg. for chili sauce, Target, HF, eCource, council)
  B - egg salad, veggies (me), strawberry banana sourdough muffins, fruit (Justin)
  D - roasted corn white fish (w/ homemade mayo), rice, beans

T (chop tomatoes for chili sauce, Dr. D., FM, class - just me)
  B - yogurt/granola, veggies (me), sourdough strawberry banana muffins, fruit (Justin)
  D - balogna, misc. veggies

W (chop veggies for dinner, bake squash, chop fruit for smoothie, KM, Meijer, DC meeting)
  B - scrambled eggs, veggies, strawberry banana sourdough muffins
  D - grilled hamburgers, roasted cauliflower and brussels sprouts, amber cup squash

Th (chop veggies for chili sauce, Grassfield's, freeze butter, make kefir, make zucchini bars, classis - just me, soak lentils)
  B - kefir smoothies toast w/ pb, avocado (me), breakfast cookie, grapes (Justin)
  D - leftover hamburger, cauliflower, brussels sprouts and squash

F (chop veggies for dinner, chop fruit for smoothie, chop veggies for chili sauce, MOPS open house, clean, chop tomatoes)
  B - egg puffs w/ squash, veggies, toast, fruit, chocolate chip zucchini bars, veg, cheese, fruit
  D - ground chicken, lentil and veggie chili, cornbread baked chicken, squash, roasted cauliflower, beans, zucchini and peppers

S (make/can chili sauce, laundry, orchard, clean)
  B - scrambled eggs or leftover egg puff, veggies cheese, leftover veggies, tortilla chips (me), chocolate chip zucchini bars, fruit (Justin)
  D - leftover chili and cornbread hot dogs, squash, leftover roasted veggies

    Have you posted your chili sauce recipe in the past?

  2. I guess I haven't posted it...I haven't made it in a few years :P We opened our last jar today to have with our roast beef. I'll be sure to post it if I make more. It's from my MIL. Very good. That was about all that sounded good to me for lunch today. I had a big pile of chili sauce :P And a few bites of beef and veggies. Just did not appeal to me at all. Lately for lunch I want fruit/cold food. Strange. No more "Sunday dinner" for me for a while I guess.
