Meal Plans Week of 9-19-10

Wow, the last full week of September already.  Hard to believe.  This will be an interesting week for sure.  First...I do NOT feel good.  While I'm thankful for that it's still miserable.  And makes it hard to plan and keep up with things.  So meals this week are subject to change depending on how I feel each day :P  I usually do ok with dinner.  Breakfast and lunch I just have to see how I'm feeling at the moment.  Today was another toast morning :P  At least I still managed some veggies.  Aside from my physical state, this is a big week...our first ultrasound.  We will find out if we are expecting 1, 2 or 3!!  We trust it's all in God's hands and that however many it is he/she/they are healthy.  That's what matters.  We are both very nervous and excited.

I did not end up going to Grassfield's last week because I realized their store hours didn't work very well for us, and I wasn't feeling very good.  We are hoping to visit as a family at some point.  Possibly this Sat. or the following Sat.  But we'll see.  We will get to meet the people from Grassfield's when we pick up our co-op order this week at least.  And the main reason for visiting was to decide whether or not we want to get a herd share from them and get raw milk.  Justin and I talked about it yesterday.  With our current situation, me being sick right now, not knowing what next spring will bring, etc., I think we have decided not to get a herd share right now.  We are disappointed.  It's not because we don't want the milk.  We really do.  But it's a long drive.  And I don't have a backup right now if I can't pick up the milk every week.  Justin probably couldn't even do it/fit it in his schedule.  So for now we'll wait.  We are still on the waiting list for Lubbers Farm.  If that opens up we would do it for sure.  It is only about a 10 min. drive.  If not, we'll see how things go next year.

We did make a trip to Wells Orchard yesterday for apples and squash.  Time to make applesauce, dried apples and freeze squash.  I hope I'm feeling up to it yet this week.  Trying to do what I can while I can since I know I'm not even at the worst of it yet.  I also got a few things done in the kitchen (not much since Justin was gone all week again).  I made/canned a batch of chili sauce.  I made a batch of chocolate chip zucchini bars.  Other than that I did a lot of fruit and veggie chopping for meals.  And I ran a lot of errands.  Plus an unplanned visit to the Dr.

On to this week.  Today is church.  I hope I can make it through the service.  Monday is Meijer and nursery cmt. meeting (which means early dinner).  Tuesday Justin will be taking a day of vacation.  We might get the breaks on my car checked.  We'll go to the farmer's market and then to our ultrasound appt.  Then Justin has class in the evening.  Wednesday is Kindermusik in the morning.  In the evening we'll have to eat early, pick up our co-op order and then Justin has worship team rehearsal.  Thursday and Friday are open right now.  We'll see how I'm doing if I want to make any plans.  Our plans for Saturday are not finalized yet.  We might visit Justin's Uncle's farm.  We might pick up our chickens (ordered some from one of Justin's co-workers).  We might visit Grassfield's.  We might go to ArtPrize.  Some of my siblings might be visiting.  We're waiting to hear back about visiting Voogt Farm and we'll go from there.

My plans in the kitchen are pretty ambitious this week.  I hope I can get it all done.  I want to make a new batch of sourdough english muffins, grind some flour, make/can applesauce, dry apples, make/freeze basil pesto and render some pork lard.  If we do end up getting our chickens on Sat. I'll have to deal with those too.  I hope I can handle that.  Else Justin will have to do it :P  Also, if I find some good veggies at the farmer's market I might try to freeze some.

For meals I'm just making what sounds good, what's in season, and still trying my best to nourish  my body.  Not a lot sounds good these days, so it's tough.  And we are out of eggs right now.  Yikes!  Thankfully we'll be getting 4 dozen on Wed. :)  But we'll do our best.  Here's what's on the menu for now.

M (make sd english muffins, Meijer, nursery cmt)
  B - sd english muffins /w pb/butter, fruit, veg.
  D - (early) - leftover 7 layer dinner, home canned applesauce

T (make applesauce, fm, Dr. D., class)
  B - sd english muffin with pb, avocado (me), homemade pb chocolate poptart (from freezer) (Justin)
  D - (early) - squash soup and grilled cheese

W (can applesacue, KM, WT, co-op pick up, soak lentils)
  B - sausage links, toast, fruit, veg.
  D - (early) - leftover squash soup, grilled cheese

Th (cook lentils, chop veggies)
  B - scrambled eggs, veg, toast
  D - sloppy lentils over spaghetti squash, roasted cauliflower and brussels sprouts

F (cook lard, make/can applesauce, dry apples, chop/freeze fruits and veggies)
  B - strawberry banana smoothie (Justin), cheese, avocado, leftover veggies, banana (me)
  D - sausage links, scrambled eggs, toast, broccoli, applesauce

S (make sd chocolate cake, visit Voogt Farm, family over?, make/freeze pesto?)
  B - sausage links, veg. (me), leftover scrambled eggs, toast (Justin)
  D - leftover sloppy lentils, roasted cauliflower

  1. I'm sorry you're suffering from so much "morning" sickness! Hopefully it doesn't get too much worse for you!

    Tomorrow is the big day - yay!! I'm praying for great news for you guys!! :)

    Bummer about the milk decision, but it makes sense. I thought there was another farm offering cow shares out towards Holland? Maybe that's something to look into - then Justin could pick it up on his way home once a week?

  2. The place in Holland only has goats as far as I can tell. I had hoped they had cows.

    Just trying to get through each day. It's not fun, but it's so worth it. I think things are worse this time...seems to be all day sickness with not much relief. Maybe it's double :P And it's coming on strong early. Can only imagine what things will be like in a couple weeks.

    Hope I do ok on Sat.
