Meal Plans Week of 10-10-10

10/10/10 - fun date to start the week with :)  The engineer in me sees lots of ones and zeros ;)  Today should be binary day.  Anyway, on to a new week.  Still just plugging along trying to keep up.  I'm learning that if I do much extra work or get too tired I feel a lot worse.  So these days I'm basically doing the minimum to keep our house functioning.  And taking lots of time to rest.  That being said we do have another somewhat busy week.  Today is church, and I am helping with Little Lambs again.  Monday we are having our furnace inspected in the morning.  Then it's grocery time, and Justin has council in the evening.  Tuesday can't come soon enough!  Justin will be home in the morning.  We'll go to the farmer's market and to our 9 week ultrasound.  So excited and so nervous.  As a check up approaches I always get so nervous.  When dealing with infertility you never feel confident until you have your baby in your arms.  Praying all is going well and that we get to see our little bean wiggling around.  Justin will be going to work right after our appt.and then going to class in the evening.  Wednesday morning is Kindermusik.  And if the weather is decent I might try to take Rebecca to the first half of the Calvin women's soccer game in the afternoon.  They only have one home game left for the season.  And I think it would be fun to go.  Hopefully it's a nice day and we're feeling up for it.  In the evening Justin has a meeting at church.  No plans for Thursday.  Finally a day to stay home!!  It's been a while.  Friday is MOPS.  And Saturday we'll be heading to Grand Blanc for my nephew's first birthday party.  It was supposed to be yesterday, but they postponed it since they were sick.

Last week I did end up going to the big 2nd hand sale.  I got some toys and clothes for Rebecca, a couple maternity tops and a few baby things :)  And since we ended up staying home yesterday we started mini van shopping!  We still have a lot of looking to do, but it was fun to get started.  I wish we could have amazing fall weather like we had yesterday all the time.

Kitchen work started out strong last week.  I made a lot of chicken broth, and froze a lot of roast chicken.  I canned another batch of applesauce.  I also made a batch of sourdough english muffins.  But by the end of the week kitchen work was minimal.  I realized that I way overdid Sunday and Monday.  By Tuesday evening I could barely function.  And I decided to take it easier.  I did finally try out my cast iron skillet - cooked our steak in it.  And I used a little bit of lard on the baking pan when I made chicken nuggets.  Can't say we noticed any major difference, but they did taste good.

So, not too much extra planned for this week.  I would like to make an apple pie to use up a few more apples.  And make another batch of dried apples.  I bought some cream last week since we took a last minute trip to Harvest Health when I realized we were almost out of milk.  So I want to make a batch of ice cream.  That's about all I have planned.

Justin dug up all of our sweet potatoes yesterday.  We have quite a few this year.  I may have to freeze some soon so they don't go bad.  Until then we'll enjoy sweet potatoes.  Yum!!

I think I'll do the breakfast options again.  That worked well last week.  I just never know what I'll be up for in the morning.  Lots of toast and pb these days :P  For feeling sick all the time and not much food sounding good I guess I'm still eating ok...I've already gained 3 or 4 lbs. :P  That's pretty typical for me.  Probably doesn't help that I'm eating more junk than usual.  Oh well.

Doing my best to keep getting my essential nutrients in.  But it's tough.  Managing eggs here and there (wish they sounded better more often).  I still eat plenty of butter at least :)  Try to get plenty of protein/animal fat.  I'm not too concerned, even if I can't eat exactly as I'd like.  So, here's what's on the menu...for now.

Breakfast options - toast, english muffins or bagels w/ pb, granola bars, muffins, scrambled eggs, fried eggs, breakfast sausage, yogurt w/ granola, smoothie, oatmeal, egg puff, hard boiled egg, leftovers

S (boil eggs, chop veggies, church, Little Lambs)
  B - sourdough toast w/ butter and pb, cauliflower, avocado (me), sourdough granola muffins, fruit (Justin)
  L - egg salad sandwiches, veg., fruit, chips
  D - beef and veggie pasta bake (was going to do lasagna until I realized I have no lasagna noodles :P  So I'll just sub another kind of pasta), cornbread

M (prep dinner, furnace, Meijer, council)
  D - pea soup (using homemade broth) with ring sausage (locally made), cornbread

T (fm, Dr. D., class)
  D - leftover pea soup

W (KM, soccer game, DT mtg)
  D - leftover pasta bake

Th (make apple pie, make ice cream)
  D - corn bread and sausage (Justin), leftover pea soup (me)

F (MOPS, clean)
  D - spinach pie, baked sweet potatoes

S (laundry, GB)
  L - in Grand Blanc (lasagna?)
  D - hamburgers, veg, sweet potato fries

  1. I don't think anyone feels confident until they have that little bundle of joy in their arms, infertility or not. :) We are praying for a great check-up for you guys!

    Hope you can make it to the soccer game - that sounds fun!

    Your meals sound great! I've been thinking of making spinach pie lately, too - it has sounded so good to me for awhile now. Love it! Yum!
