White Bean and Apple Chili
2 cans of white beans, drained and rinsed (I used one can of northern and one can of pinto)
1 onion, chopped (I didn't use this much)
2 apples, cut in tiny chunks, no need to peel (I peeled mine...for Rebecca)
3 cloves smashed and chopped garlic
3 Tbsp. butter (I think this made it greasy...I'd leave it out next time)
2 tsp. chili powder
1/2 tsp. ground thyme
1 tsp. cumin
1/4 tsp. salt (I added more than this plus some garlic powder for more flavor)
1/4 tsp. pepper
3 cups chicken or vegetable broth
1/2 cup plain non fat yogurt
1/2 cup shredded sharp cheddar cheese (optional)
Any crockpot over 4 quarts would work well with this dish.Put the butter into the bottom of your crockpot. Dump in the drained and rinsed beans. Chop up the onion and the apple. Add the spices, and pour in the broth. Stir in the yogurt. (I just threw everything, stirred and turned it on)Cover and cook on low for 8 hours, or on high for 4-5. This is done when the onion has reached desired tenderness and the flavors have melded. Stir in the cheddar cheese before serving.
This looks interesting. I don't remember seeing it on A Year of Slow Cooking. I might try it with some extra spices or sriracha would be good in it, I bet!

I don't give her apple peels yet. She still has a hard time chewing some things...or maybe I should say she can be selective :P I'm sure she would like them just fine. But she probably would have a hard time actually chewing them. She doesn't like to take the time to chew things well. And if she doesn't like something she'll just swallow it whole and gag. On Sunday she was gagging/choking on a hard boiled egg (just little cut up chunks). That's soft and she's been eating it since she was about 9m old. But she doesn't like it that much...so she tries to be stubborn and swallow it whole. You just never know. So I'm still pretty cautious about that kind of stuff.
ReplyDeleteThat's funny that she just swallows them whole. Carson's the opposite... if he doesn't like it... it comes right out of his mouth immediately. :) Its so annoying, but its just what he does. He loves apple peels, though. Although, if the apples aren't super fresh, I've noticed their peels get tougher or something and he'll chew on them for a bit. He's never choked on them, though. He'll eat a whole apple just by himself, not cut up or anything. He loves it - makes him feel like a big boy. :)
