Meal Plans Week of 12-6-09

It's hard to believe today is already the 2nd Sunday of Advent.  Only 3 weeks until Christmas!  And still lots to do.  Last week was very productive.  I made and canned 3 batches of applesauce (used up about 80 apples).  I made 2 dutch apple pies (ate one (not by myself!) and froze one).  I made a large apple crisp for our jr. high youth group Christmas party last night.  So I used up over 100 apples in 1 week.  Not bad.  There are a few left, but not too many.  I'm trying to decide if I want to try to squeeze in one more batch of applesauce or just use the last few apples for misc. things.  I made a new batch of granola.  I also got a good start on my Christmas shopping...not that I went to any stores...I shopped online and ordered some stuff from Discovery Toys (I went to a party...neat stuff).  I also got caught up on laundry and ironing (about 3 weeks worth of ironing...glad that's done).  I got out a few Christmas decorations and did a couple projects with Rebecca, including a Christmas countdown chain...which has already been torn into multiple pieces :P  Oh well.  I mailed out almost half of our Christmas cards.  And half of this was done while battling a cold.  Not too bad.  We went to Kindermusik, a Discovery Toy party and a youth group Christmas party.  We were supposed to have MOPS on Friday, but it was cancelled due to the weather.



This will be another busy week.  I teach BLAST today.  And we have our church Christmas program tonight.  We're taking Rebecca.  Hopefully she'll be able to sit through it.  Monday I have to go grocery shopping, and Justin has to meet with people from his class.  So he'll be gone most of the evening.  Tuesday I have a Dr. appt.  Wed. we have Kindermusik.  Thursday Justin has class...another day of just the girls :)  Friday we are hoping to take Rebecca to a local gymnastics place...they have open gyms on Fridays.  I think she'll really like it.  We are considering signing her up for a class.  Saturday we are meeting my brother and SIL at Frederick Meijer Gardens in the morning to see their Christmas display.  In the afternoon Rebecca will be getting her first H1N1 vaccine, and we're picking out our Christmas tree.  I also need to go Christmas shopping one or two days this week.  So we'll stay plenty busy.  I'm not 100% sure on extras yet.  I would like to do something with apples...not sure if it will be applesauce or some kind of baking.  And I might make Christmas cookies with Rebecca.With all of our errands, etc. this week I'll need some easy prep meals.  My plans will be tentative...see how the week goes.  But here's what I'm thinking right now.


S - (church, teach BLAST, Christmas program) - beef roast and mixed veggies in the crockpot (lunch); leftover meatloaf, broccoli (dinner)
M - (prep dinner, Meijer, make chocolate goodies, Justin has a meeting at 6:30...early dinner) - stuffed squash w/ quinoa and veggies
T - (Dr. appt., shopping) - beef vegetable soup (w/ leftover beef roast and homemade soup stock), grilled cheese or homemade bread
W - (KM, baking) - pork chops over rice, beans, squash
Th - (baking) - salad w/ avocado, dried fruit, nuts, cheese
F - (clean, gymnastics - easy, early dinner) - corn dog muffins, peas, corn
S - (get Christmas tree, vaccine, easy, quick) - leftover corn dog muffins and/or salad, veggie, fruit

  1. A busy week, but it will be so fun! We're so excited for FMG on Saturday! I think the kids will have a blast!

    Are you trying one of your roasts from the Voogt beef? Is this your first one? We tried one a couple months ago - yum, so good!

  2. Yes, it was Voogt beef...an english roast. Very good. A little fatty, but still very good. We've tried another one before. I can't remember what kind. They are all good :)
