Meal Plans Week of 4-17-11

We made it.  The birthday party is over.  Everyone had fun (I think).  It was great to see everyone and give Rebecca such a special day.  Princesses all around :)  Happy Birthday sweet girl.  My focus last week was mostly party prep, so I haven't really organized my thoughts/to-dos for this week very well.  All I know is it's back to baby prep.  And attempting to take it a little easier.
On another positive note, we had a great check up last week and had another ultrasound.  It was so much fun to see the baby growing strong and healthy, practicing breathing and wiggling around.  We were even able to see lots of hair!  It made all 3 of us even more excited about the baby.  And more relaxed knowing the baby is doing well and is measuring right where it should be.
Like I said, last week was mostly party/cake stuff.  So I didn't do too much else.  But I did get some more meals in the freezer, made honey coated nuts, crispy pecans, walnuts and almonds and coconut blueberry muffins.  Plus a litlte bit of clean up/baby stuff.

This week will be yet another busy one unfortunately (with 3 doctor appts.!).  Hopefully the last really busy week for a while.  Today we still have house guests (leaving after church), we're going to church and Justin has an afternoon meeting at church.  Monday is Harvest Health, gymnastics and I have a nursery cmt meeting.  Tuesday is Meijer and Justin's LAST CLASS!!!!!  We are all so excited.  In a couple weeks he will officially graduate with his MBA.  We are very excited and very proud.  Wednesday is Kindermusik and my 37 week check up.  We have our co-op pick up, and there is a chance I'll go out for coffee/dessert with some MOPS moms.  But I'll see how I'm feeli ng.  Thursday I have an appt. with my psychologist (hopefully the last one for a while :P).  Friday is Rebecca's 3 year check up.  We haven't decided yet about going to the Good Friday service.  Thankfully no plans for this Saturday.  Maybe that will be a good day to reorganize all of the toys after Rebecca got so many fun new things for her birthday.

Of course there is plenty to do at home too.  I'm hoping I feel up for it.  The last few days have been pretty rough for me.  I'm sure the stress of the party and overnight guests is part of it.  But a few poor food choices too (at least I'm figuring out more of what does/doesn't work for me).  This week I would like to get the freezers organized/get the meals organized for when I'm in the hospital.  We need to get the infant car seat installed yet.  I need to finish packing my hospital bag.  And I want to finalize all of the misc. details for while I'm gone (meal plans, grandparent instructions, etc.).  I still have to finish making an email/announcement list as well.  I'll be talking to the ped about vaccines on Friday when I take Rebecca for her check up.  In the kitchen I have a list of possibilities.  Not totally sure which I'll do yet.  I would kind of like to make hot cross buns since I've never done that before.  I should also use/feed my sourdough.  I might make a batch of bread.  We're out of apple raisin bars (Rebecca devoured them:).  So I need to make more dried apples and more bars.  I would like to make both almond flour and almond butter, mayo, hummus, gf strawberry muffins and nut butter bread.  We finished up our pb fudge.  I want to make another batch of that or coconut pb bars or pb brownies.

On the health front I think I've discovered one more thing that my tummy is very sensitive to...tomatoes.  It's another one that I've kind of suspected/known for a long time but ignored.  But it really did me in this week with a lot of tomato based food - especially spaghetti sauce.  It was homemade, but it still really did a number on me.  And I'm still REALLY feeling it today (ate it Thurs./Fri.).  I guess I'm one of those people that is particularly sensitive to nightshades (at least until my gut is healthier).  I think they cause a lot of inflamation for me.  And I'm dealing with quite a bit of pain now.  Hopefully things will get worked out soon.  I was feeling great up until that.  Several days of not much OCD stuff.  But then it came crashing down :P  I didn't even dare to splurge on birthday cake last night because of how bad things are.  Aside from that I ate pretty well...lots of beef broth.  And I'm getting 2 raw egg yolks in most days.  I'm finding I can mix them into just about anything that I can stir.  This morning I put 2 in my yogurt.

I guess that's all for now.  I'm looking forward relaxing today once everyone is gone.  Just trying to get through the morning/through church for now (anxiety and pain both pretty bad at the moment).  On to another crazy week.  Only 22 days left until baby arrives :)  Here's what's on the menu.

  B - strawberry muffins, fruit/veg.
  D - leftover salmon cakes

W (prep dinner, make nut butter bread, KM, Dr. E., pack hospital bag, co-op)
  B - cinnamon raisin nut butter bread, fruit/veg.
  D - (prep ahead) - sausage pepper egg casserole, broccoli, gf strawberry muffins

Th (chop fruit and veggies, iron, Dr. V., make pb fudge?, make apple raisin bars, organize freezers, make whey, make fermented punch)
  B - leftover egg casserole (me), toast w/ almond butter, fruit (Justin)
  D - bacon cheese burgers, peas

F (clean, make sd bread, make whey, Dr. S., make fermented punch, iron)
  B - hamburger, chicken, veggie soup (me), apple raisin bar, fruit (Justin)
  D - baked bacon and eggs, roasted veggies, sd bread

S (laundry, organize freezers, install car seat, make hot cross buns?, soak beans)
  B - leftover baked eggs and roasted veggies (me), granola/puffed rice w/ milk (Justin)
  D - gf french toast, roasted veggies

  1. I was hoping you'd have a nice, relaxing week this week after all your hard work last week. :) at least Saturday can be a relaxing day, though.

    Sorry you aren't feeling too hot. :( Hope you are feeling better later today.

    Your meals look great! I don't know if it'll help you decide what to make, or not, but I was going to make some PB coconut bars to bring out with a meal after the baby is born. I still haven't decided on the meal yet, but dessert/snacks are figured out. ;)

  2. Thanks for letting me know :) Maybe I'll go for fudge or brownies. I'm sure whatever you make will be delicious! Thankful to have someone bringing a meal I can eat :) All the others will likely go to Justin and Rebecca. At least I've got tons of broth in the freezer. I can always heat that with some veggies and meat or eggs. About the best thing for my tummy and very nourishing for me and the baby. Plus it's easy.

    Looking forward to taking it easy on Saturday (at least I hope :P). Hoping I can put my feet up for a bit today. The swelling/pain is pretty bad today after being on my feet so long yesterday. And only had about 10 min. to put them up before bed last night.

  3. Hopefully anyone who reads your blog will think to bring you a meal that you can enjoy as well! I surely hope I'm not the only one. :)
