Mint Carob Chip Ice Cream

I made a trip to Harvest Health yesterday and was able to get some good, locally made organic cream.  So I had to try some more ice cream!  I made carob chips this week and knew I wanted to add them.  And then I remembered I had some organic peppermint extract I had bought a while back to make thin mint cookies (that never happened).  So I went with mint carob chip ice cream.  I used the NT vanilla ice cream recipe I posted earlier this week and just added the mint and chips.  I also added arrowroot this time since I was able to get that at HH as well.  The result...WOW!!!!  Seriously about the best ice cream I've ever had (and I'm not even a huge mint chip ice cream fan).  And to top it off it's actually good for you!  Eggs, cream, carob...all very healthy.  With everything going on this month I know I'll be deserving of (and in need of :) a few sweet treats/rewards.  So I'll be glad to have some on hand I don't have to feel guilty about/worry they are having a negative impact.  Sounds kind of crazy, but really this ice cream has a lot of stuff that is very beneficial for conception...high animal fat (from the cream and the eggs), calcium (from the cream and the carob), protein and iron (from the eggs).  It doesn't get much better than that.  Ice cream that tastes awesome and is good for fertility :)  I just tased this right after I made it this morning.  I'm anxious to try it once it has firmed up!

You'll notice the ice cream is not in any way green.  That's because it's REAL.  If your mint ice cream (from the store) is green...you might not want to eat it :P
Mint Carob Chip Ice Cream

3 egg yolks

1/3 - 1/2 cup maple syrup (depends how sweet you like it.  I used less than 1/2 cup.)
1/2 Tbsp. vanilla extract
1-4 tsp. peppermint extract (depends how strong you like it.  I used about 2 tsp...tasted as I added until I liked it.)
1 Tbsp. arrowroot
3 cups heavy cream, not ultrapasteurized
1/2 - 1 cup small carob chips

Beat egg yolks and blend in remaining ingrdients (except carob chips) (I just did this all by hand with a whisk). Pour into an ice cream maker and process according to instructions (It took about 15 min. in my Kitchen Aid ice cream maker attachment).  Add carob chips during the last 2-3 min. of processing.  Transfer to a shallow plastic container, cover and store in freezer.
