Meal Plans Week of 8-1-10 and 8-8-10

Ok, I've got the big picture August plans done.  Now on to this week...I mean the next 2 weeks.  Since we're leaving for vacation next Monday I'm doing a 2 week plan today.  This week will be busy trying to get caught up/back into the swing of things after being out of it for a while.  I have lots of shopping to do.  Lots of kitchen work.  Plus I'll be planning, packing and prepping food for our trip.  Still no church for me today.  My belly hasn't quite shrunk enough yet.  Hopefully by tomorrow it won't be so noticeable.  As long as my body is ready I need to grocery shop on Monday.  I need to go to both Meijer and either Hefron Farms or Harvest Health.  I haven't decided for sure which day I'll do which.  Tuesday is the farmer's market and of course voting!  Wednesday will be my other errand day...whatever I don't get to on Mon. or Tues.  I'll be going through another week of the NKU eCourse.  No other outings planned so far (unless I need to make a trip to Target).  But I'll be busy with stuff at home the rest of the week.

I wasn't able to do a lot of extra kitchen work last week, but I did make chocolate chip cookies, zucchini bars, breakfast cookies, blueberry crumble and froze more beans.  This week I need to get my kefir going again.  Hopefully all of my grains are still healthy.  I need to feed and use my sourdough starter.  I'm planning to make more muffins.  Probably blueberry.  I'd like to make some popcorn to take on our trip.  Regular for sure.  But maybe also kettle corn and/or caramel corn.  I'm hoping to get more blueberries this week and make/freeze a couple pies.  I want to make some veggie chips to take on our trip.  And of course keep freezing beans and corn.

My meals this week focus on a few things...fertility (as I prepare my body for a transfer), gut (as I prepare my body for travel) and using up what we have in the house (before we leave for a week).  I have a ton of plain yogurt to use up, so I need to find a recipe for that.  And I have quite a few eggs still to use.  Here's what's on the menu.

  D - egg salad, cucumber slices, fresh tomato, yogurt, home canned apple pearsauce

M (eCourse, Meijer, HF, make kefir, freeze corn)
  B - leftover egg salad on sourdough (me), fried egg, sourdough toast (Justin)
  D - baked red skin potatoes stuffed w/ chili, corn on the cob

T (fm, vote, freeze corn, make sweet potato chips)
  B - strawberry banana blueberry kefir smoothies
  D - chx nuggets, peas, sweet potato fries w/ fermented ketchup

W (make pie crust, make ranch dressing, make thousand island dressing, make/freeze blueberry pie, freeze corn, prep sourdough)
  B - sprouted apple raisin bagels (from freezer) w/ butter and cream cheese
  D - romaine salad w/ hard boiled egg, avocado, raw corn, cucumber and tomato, mild white cheddar cheese

Th (make sourdough banana blueberry muffins, make/freeze blueberry pie, clean, freeze beans, make yogurt blueberry muffins, soak flour for zucchini brownies)
  B - sourdough banana blueberry muffins, blueberries, bananas
  D - CA BLT on ww bread, beans, fresh fruit

F (make zucchini brownies, Harvest Health, laundry, clean, pack, make caramel corn and popcorn)
  B - blueberry, peach, banana, avocado kefir smoothies
  D - zucchini casserole, corn on the cob

S (pack, co-op order)
  B - peach avocado kefir smoothie (me), whole wheat blueberry muffins (Justin)
  D - bacon bowls w/ scrambled eggs, beans, blueberry muffins

S (church, pack, prep fruits/veg., feed sd, store kefir grains)
  B/L/D - leftover zucchini casserole, eggs?, misc.

M - S (WI)
