Taco Potatoes

Last night for dinner we had a new Heavenly Homemakers recipe.  It was really good.  It's basically using baked potatoes as a base for tacos instead of a shell/tortilla.  All three of us liked it.  And it was nice to have some variety and use our homegrown red potatoes.  Definitely a keeper.  Note the top picture is my potato...the bottom is Justin's :)
Taco Potatoes

6 baking potatoes
1 lb. ground hamburger meat (I used ground chicken last night)
½ pkg. taco seasoning (I used our homemade taco seasoning...to taste)
½ cup heavy cream (I used whole milk since that's all I had on hand)
½ cup shredded cheddar cheese
1 cup salsa (I used our homemade salsa)

Preferred toppings such as lettuce, tomatoes, olives, sour cream, etc. (we used sour cream, shredded cheese, salsa and avocado last night)

Bake potatoes.

Brown hamburger meat, drain and add seasoning. Stir in cream, salsa and cheese. Stir on low heat until cheese is melted (mine was a little liquidy since our homemade salsa is fairly liquidy.  So I let it simmer for about 10 min. to thicken more).

Cut potato open on plate. Pour meat sauce over potato and load it up with toppings you prefer.
