Meal Plans Week of 2-20-11

I really can't believe this is the last full week of February!  So much to do and the clock is ticking.  I better keep working hard this week :)  Last week was fun.  I had another good OB appt.  I had a great time chatting with other moms at our MOPS playdate.  I got to do some cake decorating.  And we had a blast at my nephew's birthday party yesterday.  I also had fun in the kitchen making fermented punch, whole wheat beer bread, crispy macadamia and hazel nuts, peanut butter popcorn (and learning how to make good popcorn) and bread pudding.


This week will be busy with stuff around the house.  Not too many outings at least.  Today is church.  Hopefully the weather won't get too bad until this afternoon.  Monday is Harvest Health, gymnastics, and I have a nursery cmt meeting.  Tuesday and Wednesday Justin will be out of town for work just during the day.  So we won't really notice much of a difference except he'll have to leave earlier to catch his plane.  Tuesday is Anna's Circle, and Justin has class.  Wednesday is Kindermusik and Meijer.  We also have co-op pick up.  We still have to figure out if we want to do that before dinner or after dinner.  No plans for Thursday and Friday at this point.  Although I told Rebecca maybe we could go to the library.  We'll see.  Saturday is still TBD.  My cousin and his family will be in town, so we might visit them...and a bunch of my family that is also coming to see them.  We're still trying to work out the details.  I know Rebecca will be so excited if she gets to see Carson for the 3rd week in a row :)  Plus grandparents and other relatives.

Last week I spent most of my extra time working on cake.  This week I need to get going on some sewing projects.  I think I'll work on my diaper bag this week.  After that I'll be making a princess dress for Rebecca.  She decided she wants a princess birthday party this year.  So we bought a pattern and fabric last week for a simple dress for her party.  We are still waiting for Rebecca's new dresser (looking like early March right now).  So still not much progress on swapping rooms.  In spite of that I might start washing baby clothes and cloth diapers later this week.  It's making me anxious to not have a single baby thing ready yet.  And we'll be getting our new laundry detergent from the co-op this week that is safe for cloth diapers.  So I guess I'll start washing...and just start a pile until I have a free dresser for everything.  Speaking of parties, I need to start planning Rebecca's party.  That'll be here before we know it.  Less than 2 months!  And we're trying to figure out if we can do a short weekend vacation close to home.  Like I said, lots to do/squeeze in.  Not a lot of time.

I'll be busy in the kitchen at the beginning of the week.  This morning I cooked beans so I can make another batch of bean paste (almost out!).  Lunch is in the crockpot.  This afternoon I would like to make mayo, honey mustard dressing and grind flour.  I also want to try making hamburger buns this week.  I tried a long time ago without much luck.  But I've improved my bread baking skills since then.  So I want to give it another go.  I'm also going to roast a chicken this week.  Which means deboning and freezing meat and making and freezing stock.  Other than that just keeping up with the regular meals and snacks.

Here's what's on the menu this week:

M (clean, sewing, HH, gymnastics, put away laundry, nursery cmt, soak and dry cashews)
  B - scrambled eggs, toast, fruit, beans
  D - (early, easy clean up) - homemade fish sticks w/ tartar sauce, leftover tater tots, broccoli

T (prep smoothies, AC, grind flour, make hamburger buns, class, make kefir)
  B - (separate/early) - blueberry, cherry, avocado kefir smoothies
  D - leftovers

W (sewing, KM, Meijer, co-op)
  B - (separate/early) - yogurt, granola, fruit
  D - (early or late?) - hot taco rice

Th (prep smoothies, chop fruit and veggies, plumber, library, debone/freeze chicken, make broth)
  B - blueberry, pineapple, kiwi, avocado kefir smoothies
  D - roast chx, squash, peas, applesauce

F (clean, baby laundry, bake cake, freeze broth, soak beans)
  B - chocolate swirl bread, fruit, squash
  D - avocado and cheddar omelet, bacon, roasted veggies, applesauce

S (sewing, laundry, clean, visit VHs, brother and sil over)
  B - yogurt, grain free granola, beans, roasted veggies (me), chocolate swirl bread, fruit (Justin)
  D - cashew avocado chx salad w/ bacon on homemade buns, roasted veggies crockpot chili, toppings, bread

  1. You have a lot going on this week... it'll be another week to go by fast! :) I am so excited for you to start using the cloth diapers b/c I can't wait to hear about them! :) Is the detergent from the co-op homemade? Your co-op sounds awesome!

    I almost decided to do a roasted chicken this week, too. It sounds so good to me... plus I love all the easy-ready things that go into the freezer after roasting one. I'm about out of my stash of chopped and shredded chicken in the freezer.

    Your dinner tonight sounds super fun! Are you doing the HH tater tots? I want to try those one day, too. I have wanted to try making homemade fish sticks a few different times, too... but still haven't.

  2. Yeah, busier than I thought at first :P And now we might have a plumber come too (making progress on the basement bathroom). Oh well. Hopefully I have enough energy/motivation.

    The detergent is homemade/from a small local company. We already use their detergent, but this time I ordered their "nursery" version.

    I'm out of chx broth. That's my real motivation for roasting a chx. Honestly chx hasn't sounded very good since I got pg.

    Yeah, trying the HH tater tots. Something different. Potatoes are baking right now :) The fish sticks were just something I came up with off the top of my head as a way to get fish in this week. No recipe. Just gonna wing it.
