Meal Plans Week of 3-13-11

Good (yawn) morning.  Anybody else tired today?  Never fun to lose sleep.  We'll see how we fare today.  Another busy week ahead.  Always so much to get done in these last few weeks.

Last week was fun and productive.  Not a ton of progress on Rebecca's room.  We just aired it out all week.  Hopefully we can get her moved in this week.  We'll see if the smell goes down enough.  At least I got her clothes moved to the new closet.  I did finish Rebecca's princess dress for her birthday party (in a month).  That was definitely challenging for a new sewer.  But it turned out great.  And I'm glad it's done.  I also made a few cloth wipes this morning.  I'm experimenting with technique.  I want to wash these to see how they hold up before I make more.  I decorated my birthday cake...a practice cake for Rebecca's cake.  We went to a 2nd hand sale...didn't find a ton, but at least we got a few things.  I also took out a few baby things to wash and set up.  And did some cleaning in the nursery.  Our major event for the week was the Disney Princess on Ice show yesterday afternoon.  Rebecca was a little emotional in the first half (I had to take her out for a bit because she was crying...she said she was sad).  But after that she really enjoyed it.  We all did!  A princess cup helped cheer her up too :)  After we bought it at intermission and headed back to our seats she said, "I'm happy now." :)  After the show I opened birthday presents.  And after dinner we had princess birthday cake (yum!).  It was a fun family day.  In the kitchen I kept plenty busy last week too.  I froze a couple dinners, made mayo, sprouted flour, grain free muesli, crispy almonds and peanuts, honey roasted peanuts, hot fudge, kefir, cheese crisps, honey mustard dressing, cream cheese, fermented punch, 2 batches of bean paste, a mini ice cream cake, deodorant (recipe to come) and 2 batches of black bean brownies (for MOPS this week).
This week we have stuff going on pretty much every day.  At least Justin will be on a normal schedule this week.  Today is church.  Monday is Harvest Health and gymnastics.  Plus Justin has council (looks like a birthday evening alone for me :P).  Tuesday is Meijer and Justin has class.  Wednesday is Kindermusik, an OB appt. and Justin has worship team.  Thursday I have an appt. with my regular doctor.  Friday is MOPS.  Saturday will be get stuff done around the house day.

The kitchen will be busy as usaul.  Friday we're having Taste of MOPS.  So anyone can bring food and recipes to share.  I already made black bean walnut brownies (an updated version with ground up crispy almonds...yum!!!).  And I'm going to make some mini breakfast cookies too.  I need to make another batch of mayo.  And I want to experiment with making sourdough breakfast cookies.  As usual I'll try to freeze at least one meal.  I have a few potentials, depending on how our week goes - grain free scotcheroos, homemade chocolate chips and grain free breakfast bars.  Other than that I want to keep working on Rebecca's room.  And if all goes well move her in.  I also need to keep working on planning her party.  Invitations are out at least.

On the health front...still trying to figure things out.  I did very well with eating gluten/grain free last week.  But I still had some rough days.  I think it was because I ate salad almost every day.  I'm realizing that until my gut is healthier I can't handle too much raw food (veggies).  And I have to remind myself every day that I am pregnant...and that is going to mess things up no matter how well I eat.  I also have to contend with my anxiety.  That controls my gut more than anything I eat.  So on days that I have high anxiety there isn't much I can do.  But I will keep plugging along.  My hope is that by having so many healing habits in place now things will improve quickly after the baby is born.  I can also tell that my sugar intake makes a difference.  Bad bacteria feeds on sugar.  So the less sugar I eat the better...even though that's very tough while pregnant :P  And I've found this week that by cutting out grains my sugar cravings have gone up quite a bit.  It's all about the starch.  I need to continue to focus on making broth, protein and cooked veggies the majority of my food intake.  I'm trying to make soups more often and then eat leftovers for breakfast.  A good way to start the day.  One step, one day at a time.

  B - leftover lentil soup (me), breakfast cookie, fruit (Justin)
  D - grain free fish sticks, homemade french fries, peas

T (prep smoothies, sewing, Meijer, class, feed sd, soak beans) - grain free
  B - kefir smoothies
  D - leftover fish sticks, veggies

W (make sourdough breakfast cookies, cook beans, prep dinner, KM, Dr. E., WT, freeze soup)
  B - sd breakfast cookies, veggies, fruit
  D - (early/prep ahead) - butternut squash and sausage soup, cheese crisps/crackers w/ cheese


Th (prep smoothies, sewing, Dr. H., shopping, chop fruits and veggies) - grain free
  B - kefir smoothies (me), bagel w/ pb and small smoothie (Justin)
  D - sloppy joes, beans, chips, salad

F (clean, prep dinner, make kefir, MOPS - bring food) - grain free
  B - leftover squash soup (me), homemade granola w/ milk and banana (Justin)
  D - crustless quiche w/ bacon and broccoli, roasted veggies, fruit

S (make chocolate chips, sewing, laundry, shopping, move Rebecca to new room) - grain free
  B - yogurt/kefir, granola, fruit, veggies
  D - leftover quiche, bacon, roasted veggies, fruit

  1. The Taste of MOPS sounds fun! I still want to try that black bean brownie recipe. I bet they are good with the walnuts and almonds! I think I saw Donielle post something on FB that she tweaked the recipe yet again this week, maybe? I can't remember when I saw it now.

    Hopefully you'll be able to move Rebecca into her new room. Crazy that the smell is still so strong! Hopefully you can open up the windows wide with the warmer temps this week. :)

  2. Do the black beans in the brownies upset your system? I know you've mentioned issues with black beans in the past.

  3. I think if they're pureed the beans are ok.

    My update with the almonds was Donielle's tweak. You grind the almonds first. She also added spinach. I didn't do that.

    Glad the rest of the brownies are in the freezer. So hard to keep myself away from them :P Chocolate and "safe". I ate the last one that I had left out to sample last night :)
