Zucchini Soup

I'm still working on using up the last of the zucchini from our garden.  So last week I made a zucchini soup.  It was really good!  And so simple.  It's basically just broth and vegetables blended together.

It's a great way to use up zucchini.  And it's a great way to get your whole family to consume more broth.

It also tastes great cold.  I ate the leftovers for breakfast.  Yum!
Zucchini Soup

3 medium zucchinis, chopped
1 small carrot, chopped
1 small red onion, chopped
2 cups chicken broth
salt, pepper, garlic powder to taste
1 cup diced, cooked chicken (optional)

Cook vegetables in broth until very tender, about 30 minutes.  Add seasoning.  Puree with an immersion blender or regular blender.  Adjust seasoning.  Add diced, cooked chicken and simmer for 10 minutes.
