Wow, the end of October already. Hard to believe. Unfortunately there won't be much exciting going on food-wise for us this week. In fact, I don't even have many meals planned. I have jury duty this week. Which means I have no idea what my schedule will be! I'll be taking things one day at a time. So far all I know is that I have to report Monday morning. And we'll go from there. So instead of the usual meal plans I'll be doing a list of potential meals (easy, old favorites, prep ahead). Then I can decide as the week goes on what fits into my schedule. My parents will be here to watch Rebecca while I am at jury duty. So there is a chance they would eat dinner with us this week. So that will factor into my meal plans as well.
Last week I ended up not having time for the baking I had intended to do. So no new breakfasts. And this week will probably be the same. But at least we did a few this month. And I will continue to do so when it works/when I have time.
Other than jury duty, Justin will be gone all day both Tuesday (work stuff) and Thursday (class). So I don't need dinner for him on those days. And Friday afternoon (assuming I'm not tied up with jury stuff) Rebecca and I will be going to Justin's work for a Halloween thing...all the kids dress up and walk around to get candy. Much easier with little ones than going out at night. And everyone gets to show off their kids :) We are really looking forward to that! We won't get home until about dinner time, so I'll need something prep ahead/crockpot. Saturday is Halloween. Since trick-or-treaters start coming around dinner time I try to do something simple and quick, and sometimes we try to eat a bit early.
If I end up not having to go in much this week I would like to do some extra food stuff...possibly make granola (Rebecca loves to help with this), make grahams (Rebecca loves to help with this), start baking the cake for my SIL's recital, make and can applesauce, make scones, freeze peppers. My in-laws brought us tons of apples on Friday. So I'll be working on applesauce for many weeks to come. They also brought some other produce that I will have to deal with a little at a time. Lots of squash, peppers, poatoes, carrots and onions.
Here are the meal plans/ideas for the week:
S - (early workout, church, teach BLAST, prep food, etc. for the week) - leftover squash and sausage soup, leftover beer bread (lunch); leftover pasta w/ sun-dried tomato pesto, veggies (dinner)
M - (early workout, jury duty) - 7 layer dinner in the crockpot
T - (early workout, jury duty, visit grandparents, Justin gone all day) - leftover soup
W - (early workout, Kindermusik, Meijer) - leftover 7 layer dinner
Th - (bake cake, Justin has class) - misc. - leftovers, mixed veggies
F - (bake cake, clean, Halloween party with Justin) - hot dogs, veggie (TBD), home canned peaches
Dinner options for T - F:
pea soup
ravioli
corn dog muffins
hot dogs
lazy chicken
salsa chicken
balsamic chicken
eggs
grilled cheese and veggie soup
S - (clean, laundry, Happy Halloween!) - sun-dried tomato pesto, spinach and broccoli quiche, pumpkin scones
Lunch options for Rebecca and my parents:
leftovers - 7 layer dinner, squash and sausage soup, ?
bread or tortilla w/ peanut butter
bagel w/ cream cheese
hot dogs
grilled cheese
misc. - peas, avocado, yogurt, cheese, corn, cauliflower, broccoli, squash, dried fruit, fresh fruit, crackers
Hopefully you will only be there Monday morning and will be excused from the rest. If you make it known to whomever needs to know that you have overactive bladder issues and are being psychologically treated for anxiety issues, you'll be excused with no questions asked.
ReplyDeleteWe stopped over to your parents house yesterday - she had her crockpot out. I was glad to see she's using it and asked what she was making. She was planning to make 7-layer dinner today so they'd have a meal ready when they got home from church. I guess I should try that one sometime, seems to be popular in your family. :)
