Meal Plans Week of 1-17-10

This week doesn't seem quite as crazy as last week.  But that can always change :P  I haven't fully planned out my week yet...which days to do things, etc.  I have a nursery cmt meeting on Monday, so we need dinner early.  And I have to go grocery shopping as usual.  I might be visiting my grandparents this week...depends how healthy we are and if my grandparents are going to be around.  If I think I have time I should get to church this week to put up some new nursery forms.  Ideally this will be a really quick job.  No big deal to just tape them on the check in counter.  But the old forms are pretty well stuck.  And it could require lots of goo gone and scraping.  No fun.  We are in the process of looking for a pull-out couch.  So we might go furniture shopping sometime this week.

Last night Justin and I went out for a nice dinner with some of his co-workers.  I had chicken with a peanut romesco sauce, veggies and apple cider smoked bacon risotto.  It was very good!  Maybe it'll inspire me to come up with some similar creations.  Unfortunately going out meant that Rebecca got to bed very late...almost 2 hours late!  So we'll see how she's doing today.

Not sure about extras this week.  I would like to use my mixer at least once, but we'll see.  I want to bake and freeze some more squash...gotta use that stuff up!  I am scheduled to bring treats to our nursery cmt mtg tomorrow.  I totally forgot until yesterday.  So I doubt I'll have time to do any fresh  baking for that.  I'll have to use my freezer reserves :)  Not such a bad thing, though.  We need to use some of it up.  I'm running out of space and tupperware.  If time allows I might do some more experimentation with bread...homemade bagels or english muffins.  Or I could start baking and freezing cakes for the birthday parties coming up in Feb.

Justin's parents will be here next weekend, so it's time to start brainstorming dinner and dessert ideas.

Rebecca continues to do well with her activities.  She used the potty again.  She's listening well and has not needed many time outs.  She is slowly putting fewer things in her mouth.  She's doing well with toy clean up.  She's getting better at using her fork and spoon.  And she did great last night, her first time being dropped off at a baby-sitter's house.  She ate well and played well there.

On to the menu:

S - (church, meatless) - crockpot broccoli/mixed veggie cheese soup w/ homemade wheat thins and cheese spread (lunch); leftover artichoke bake and leftovers from dinner out (dinner)
M - (bake squash, prep dinner, Meijer, nursery cmt, early) - meatloaf, squash, peas
T - salad  sick - leftovers for Justin
W - (meatless) - tomato soup and grilled cheese or bread sick - leftovers for me
Th - sick - leftovers
F - (clean!!) - baked chicken w/ baked potato and beans (Justin) on top of salad (me...if my tummy is up for it, else same as Justin)
S - (laundry, clean, meatless) - butternut squash soup, bread or cornbread

  1. Three meatless meals in a week - yeah!!! I'm excited to see your tomato soup recipe - I'm planning to make some next week and I think I might can it this time, too. At least a few pints.

    Your dinner last night sounds delicious... well other than the bacon. :-P
