Yesterday for lunch I tried another Year of Slow Cooking recipe. The actual recipe is Honey and Orange Tofu. I made it with chicken. And in the end I didn't really follow the recipe so much. I just used it for the sauce...which is 4 ingredients. So I'll post what I did. If you want the original recipe you can look at Stephanie's blog. I used 2 large chicken breasts. I think I'd double the sauce next time with that amount of meat. So I'll post it with the ingredients doubled. We all really liked this! Rebecca especially liked the "soba doodles" :) And it's so easy to prep...about 5 min. Plus I always have soy sauce, honey and orange juice in the house. I think this will be a regular crockpot meal for us. I served it over soba noodles and topped it with crunchy chow mein noodles. You can use whatever veggies you want with it (or none if you just want the meat). I used a combo of broccoli and beans.
Crockpot Honey and Orange Chicken
2 large boneless skinless chicken breasts (~ 1lb.?)
2 cloves of minced garlic
1/2 cup soy sauce
1/2 cup orange juice
1/2 cup honey
any veggie you like, fresh or frozen (I used frozen broccoli and green beans)
Place the chicken (fresh or frozen, mine was frozen) in the crockpot. Add the garlic, soy sauce, orange juice and honey. If you are using fresh veggies you can add them now as well. Cover and cook on high 4-7 hours or low 7-10 hours (I used a tent of foil since I used my 6 qt. crockpot and this didn't even fill half of it). An hour before serving shred the chicken and add frozen veggies (if using). Cook 1 hour on high. Serve over rice or noodles.
Yum, this looks great!! I'm guessing I'll have some tofu leftover after my meal this Friday - maybe I'll try this with the tofu next week.
