I cooked some of our home grown beans last week. They turned out pretty mushy. Not sure if it's from the quality of the beans or if I just cooked them too long. Either way they aren't the best as is. I'll be making them into a puree to freeze and use in things like casseroles, dips, etc. If time allows this week I'd like to cook and can more beans. Not sure how much other extra stuff I'll have time for. I'm hoping to do some baking today for a friend and drop that off with a meal tomorrow. I might try using my mixer for my baking today. I'm having problems getting to work properly. It acts like the beater is hitting the bowl, but when nothing is in the mixer it doesn't. I tried adjusting the beater height, but it didn't help. So I need to try some other recipes. The last two things I tried making were really thick, so that may have been the problem. I have a bunch of frosting and icing to use up now, so at some point I want to make more cake or cupcakes. But I don't know if it will happen this week.
Still working on varying our breakfasts. I think we had 3 non-cereal breakfasts last week. If I keep up this half and half thing (3 or 4 different breakfasts a week) that will really cut down on how much we spend on cereal. Plus we'll be eating a variety of other healthy food.
Other than food stuff this week I need to clean, clean, clean!! Laundry is piled high. Sheets and towels need to be changed. There is still clean laundry from last week that needs to be put away. The bathrooms really need to be cleaned. All kinds of stuff. Hopefully over the next few days I can get everything back in working order.

ReplyDeleteSorry to hear Justin's not feeling well! I hope Joel didn't really have the flu (Julie said he wasn't feeling well the rest of the night and got sick in the night again on Saturday night). He was feeling ok by morning, though. Hope Justin feels better soon!!
