Meal Plans Week of 2-7-10

Here we are at the 2nd week of Feb. already.  I've had my meals planned for this week for a while now.  But most of them kind of went out the window.  So hopefully I can quickly replan this morning.  I thought I would have a bunch left over from last night's party and had that figured into a few meals.  But I was wrong.  We only have a little bit of taco meat left...just enough for dinner tonight.  So back to the drawing board.  Maybe I'll add some beans into our meals since I'm replanning.

This week isn't too busy in terms of events/errands.  Grocery shopping as usual.  Justin has council Monday night.  Kindermusik on Wed.  Justin has a missions cmt. meeting on Wed., so we'll need an early dinner that night.  And I have to drop off a meal (hopefully some day this week) for one of Julie's friends.

This week will, however, be filled with extras at home.  This Saturday is my nephew's 2nd birthday.  And I'm making 2 cakes.  So that will take up most of my spare time.  If there is time for anything else I might make a meal for my sister's friend.  And I might make some homemade grahams.  We're almost out!

I did pretty well with breakfast last week.  I had something besides cereal 4 days out of the week!  We'll see how this week shapes up.  I do have lots of sweet breads and muffins in the freezer that I should probably start using.  And we have quite a bit of frozen fruit (from the farmer's market in the summer).  So maybe I'll start digging into that stash :)

On to the meals.  Let's see...

S - (collect, bake cake) - crockpot rice and beans (lunch, meatless), Superbowl food - leftovers - nacho bar, taco salad, misc. snacks (dinner)
M - (council, Meijer, pediatrician) - roasted chicken (legs/thighs), carrots, red potatoes, beans
T - (cake decorations, make grahams?, make ice cream?, soak beans, meatless) - apple dumpling muffins (from freezer), grapes (breakfast); pita bread with hummus, roasted veggies, applesauce (dinner)
W - (cook beans, KM (cancelled), fold laundry, make cheese crackers, make muffins, meatless) - grapes, organic yogurt, homemade granola (breakfast); pasta with homemade pesto, peas and white beans (dinner)
Th - (cake, clean, class, meatless) - salad
F - (cake, pack/prep for Sat.) - salad
S - (Carson's party) - taco bar, cake

Again, this is for me so that I am sure to get things done on time.
