Stovetop Mac & Cheese

Last night we were supposed to go out for dinner with some of my family.  But Rebecca was not up for that.  So I had to come up with some last minute dinner plans.  Justin asked for mac 'n' cheese and sausage.  I don't keep boxes of mac 'n' cheese in the house anymore.  So I did a quick search for a recipe and found one in the stack of recipes my SIL Shannon had given me for Christmas.  This was very quick, easy and tastey.  Justin would have preferred it with Velveeta instead of cheddar.  So I'll try that for him next time.  I didn't eat it for dinner, but I did taste it.  I thought it was very good.  I'm sure Rebecca would have loved it too.  I only made a half recipe since I was just making it for Justin.  He ate over half of it by himself.  So although the full recipe says it serves 4, I would make more than a full recipe if I were actually serving 4 people.  I was in a rush trying to put dinner together (planned very late, had to sit on the couch with Rebecca for a while until I really had to get dinner started), so I totally forgot to take a picture.  Maybe I'll remember tonight when Justin has the leftovers.  And I didn't put the breadcrumb topping on it.  No time.

Stovetop Mac 'n' Cheese

1 1/4 cups elbow  macaroni (I used whole wheat...Justin said it made it look gray :P)
1 cup 1% milk
2 Tbsp. flour
1 1/4 cups 2% shredded sharp cheddar cheese
1/2 tsp. salt
1/8 tsp. pepper

1 slice white bread
1 Tbsp. butter melted

Cook pasta, drain.

While pasta is cooking, combine milk and flour in medium saucepan.  Whisking, cook over med. heat about 2 min., until thick.  Add cheese, salt and pepper.  Whisk until smooth.  Add pasta, toss to coat.  Let stand 4 min.

Place bread in food processort and pulse until there are 1 1/4 cups crumbs.  Heat a large skillet over med. heat.  Add crumbs, cook 5 min., until lightly browned.  Stir in melted butter and cook 2 min.  Sprinkle over pasta.

Serves 4
