Meal Plans Week of 3-28-10

Hosannah in the highest!  Happy Palm Sunday.  It's exciting to celebrate Jesus' triumphant entry.  And to prepare for Easter.  I can't believe we are only a week away from Easter already.  And a few days away from April!  But it's nice to be thinking spring finally.

A few days left to work on my March goals.  So far so good.  I'll have the full recap on Wed.  Last week I did pretty well with my baking projects.  I made dried apples, brownies, ice cream, two cakes plus a few cupcakes, chewy granola bars and a new batch of english muffins (post to come).  My main project this week (and the beginning of next week) will be finishing Justin's birthday cake(s).  I am making one cake for us to have at home.  And another cake for him to take to work next Monday (his actual birthday).  I have already baked the cakes.  Now I need to make frosting, frost and decorate the cakes.  I am also planning to make whole wheat hamburger buns today.  If time allows I'd like to bake Rebecca's birthday cake.  And we just finished up our vanilla wafers, so I could make another batch of those.

This week will be fairly busy.  Monday I have an appt. with my psychologist.  Tuesday is grocery shopping and Justin has orchestra.  Wednesday is Kindermusic.  Justin has worship team, so we'll need an early dinner.  Thursday Justin has class and I'll be prepping for Friday.  Friday we're heading to Lansing in the morning to meet my family at the MSU Children's Garden butterfly exhibit.  We'll also be having lunch with my family and celebrating several birthdays (Justin, Rebecca and my niece and nephew).  Then in the evening we'll be going to church for our Good Friday service.  Last year we did a Seder Meal on Good Friday.  I'm still debating about doing it this year.  So my meal plans for Friday are a bit tentative right now.  Saturday we'll be celebrating Justin's birthday as a family.  Justin is still trying to decide if he wants to go out for dinner, get take out or stay home.  So our plans for Saturday are still TBD.  I do know that we'll be having some awesome homemade cake and ice cream for dessert :)  I'll update later with pics and recipes.

  B - english muffins with peanut butter, blueberries and grapes
  L - leftover black bean butternut squash quesadillas w/ avocado, sour cream and salsa
  D - salad (me), barbeque on homemade buns, beans, applesauce (Justin)

M - (Dr. appt., make vanilla wafers)
  B - whole wheat bagel or english muffin with cream cheese or peanut butter, oranges
  D - leftover barbeque on whole wheat buns, peas, pears

T - (Meijer, bake cake)
  B - yum yum coffee cake, apples and oranges
  D - tacos/nachos with roasted red peppers, sour cream, cheese and white bean avocado dip, pears

W - (KM, WT, early dinner, meatless)
  B - yum yum coffee cake, oranges and grapefruit
  D - black bean burgers on whole wheat buns, peas, applesauce

Th - (class, clean, prep for Fri., boil eggs?)
  B - zucchini bread (from freezer), fruit
  D - salad or leftover burger

F - (Lansing, church, thaw cake, meatless)
  B - zucchini bread (from freezer), fruit
  L - sandwiches, fruit, yogurt
  D - seder meal - romaine salad w/ chopped egg and avocado, asparagus, crackers, applesauce with sugar pecans

S - (laundry, celebrate Justin's birthday, make frosting, frost and decorate cake, thaw work cake)
  B - yogurt, granola, mixed fruit
  D - out for dinner
  Dessert - homemade chocolate cake with homemade chocolate peanut butter cookies and cream ice cream
