A new week. Let's see if I can squeeze in this post before Rebecca wakes up. Another long night for us. No bed for me again :( Hopefully tonight. Not a super busy week this week in terms of outings. But plenty to do at home :) And we still have to get a hold of a repair person for our dishwasher, so that will be happening some day this week. No church for Rebecca and me today. Still trying to take it easy until she's 100% back to normal. She did ok during the day yesterday but then the fever started up again around bedtime and through the night. I guess this takes time.
As long as Rebecca is doing ok Monday will be grocery day as usual. Justin has council in the evening. Tuesday evening I am going out to dinner at Panera Bread with a friend. Wednesday is Kindermusik, and Justin has a missions cmt meeting, so we'll need an early dinner. This is Justin's spring break week, so no class for him on Thursday. It will be nice to have him home :) No plans for Friday at this point. And I really don't know what is happening on Saturday. We are celebrating my birthday (1 day early). All I know is we're going to Red Robin for dinner. Justin won't tell me anything else. So we'll see :)
So far so good with my bread baking. Still practicing, but I'll get there. I'm hoping to make some more fresh bread today, several loaves...get a stock going in the freezer so I don't have to bake it every week. Last week's bread was great! Great to eat on it's own or use for sandwiches. I might just try that recipe again today to get better at it. And do the full recipe this time.
I also made a trip to the meat market and the health food store last week. So now I'm stocked on some quality food again. I bought steel cut oats to try for breakfast. And some good dried beans to hopefully can at some point.
For other extras this week I'd like to make some cashew butter. I've been wanting to make my own peanut butter, cashew butter, etc. for so long now. And from what I hear it is soooo easy. Not sure why I didn't try sooner. Hopefully it turns out well. I want to make both croutons and bread crumbs from my homemade bread to use in meals this week. I'd also like to make some salad dressing. I eat a lot of salads, so homemade dressing is just one more thing I could make and save money on. Finally, I'm hoping to make both cake and ice cream this week for my birthday. I got out my new ice cream maker attachment, so that's all set to go. Now I just have to make some batter and give it a try. I still haven't decided if I will just make regular cake and ice cream to go with it or if I'll try to make an ice cream cake. Hopefully if I do an ice cream cake it will be prettier than the one I threw together from cake scraps last year ;)
This past week was our first attempt at really starting potty training. So far so good! Rebecca loves sitting on her potty. She'll sit there for a long time. You can tell she's really trying to go too. She'll push and then check to see if anything is there. We started off this week with having potty time first thing in the morning every morning. And she used the potty several days this week. She also asked to use the potty during the day a few times. She seems to be very interested and excited. So we're going with it :) We're still not in a rush or pushing anything. But if she wants to do it we're all for it. Pretty soon we can get the training diapers back out so it's easier to take them off and put them back on. This week I'll stick with the morning potty time. And maybe I'll add in one more "scheduled" potty time during the day.

S - (church, make bread, make cashew butter) - bread pudding, orange (breakfast), 7 layer dinner in the crockpot, applesauce, bread (lunch), leftover quiche and bread pudding (Justin), salad (me) (dinner)
M - (Meijer, pediatrician?, make bread crumbs and croutons, council) - toasted whole wheat bread with cashew butter, orange (breakfast), chicken cutlets w/ homemade breading, roasted asparagus, french fries (dinner)
T - (make ice cream batter, out to eat with friend) - steel cut oats w/ apple butter, raisins and walnuts (breakfast), leftover 7 layer dinner (Justin), Panera Bread (me) (dinner)
W - (KM, make ice cream, make cake, Missions, early, meatless) - baked egg puffs, peas, home canned peaches, peach bread (from freezer) (dinner)
Th - (dishwasher repair, clean, meatless) - peach bread, grapefruit (breakfast), cashew butter and jelly sandwiches, roasted cauliflower, home canned pears (dinner)
F - (clean, cake, make salad dressing) - pumpkin scones, grapefruit (breakfast), cobb salad w/ homemade thousand island dressing and croutons, chicken, diced ham, avocado, cheese, cucumber, peas (dinner)
S - (clean, laundry, spa) - yogurt, granola, grapes, cherries (breakfast), out to eat at Red Robin (for my birthday:)
Lots of good meals and fun stuff this week!! Enjoy your dinner out with your friend and your birthday shenanigans on Saturday!! I'm excited to hear what Justin has planned!
ReplyDeleteI'm anxious to see what type of salad dressing you end up making! I still make our homemade salad dressings regularly. I just made some more french dressing last week and I use my ranch mix to make ranch dressing every week we eat salads now, too. We love it! I still have a slew of new dressings I want to try still, though. But I always fall back on one of the ones I've already made.
Great job on the potty training!!
Not 100% sure about dressing, but probably 1000 Island...that's my favorite. That and honey mustard. I don't like ranch or italian at all. I do like french a lot too.

You know, I don't think I've ever really tried 1000 Island dressing... I should taste it sometime. I don't like italian on salads, either (unless its the Olive Garden salad dressing that comes on their house salad:)). But I do make it in the summer quite often to marinate chicken in and then grill it - its my all-time favorite way to have chicken, actually. I love balsamic dressing, too... and poppyseed - that is probably the next kind I will experiment with in making.
