Menu 4/24/10 - 4/25/10

My in-laws are over this weekend to celebrate Rebecca's birthday.  I went with simple, prep ahead, healthy food.  Here's what's on the menu.

Dinner:
Corn dog muffins
Roasted cauliflower and brussels sprouts
Fresh fruit salad (mix of strawberries, grapes, watermelon, pears, apples, oranges)

Dessert:
Leftover birthday cake
Homemade vanilla ice cream

Breakfast:
Apple raisin bread pudding
Fresh fruit salad and fresh fruit
Whole wheat bread with peanut butter or cashew butter
