Honey Whole Wheat Bread

My intent was to start a sourdough starter yesterday.  Well, I didn't give myself enough time to find which recipe to use/figure out ingredients/research.  So it will have to wait.  Maybe later this week yet.  Not sure.   But in the mean time I need some bread.  I've been wanting to make this whole wheat bread recipe I found on my SIL's blog ever since she posted it.  And I knew it was actually a fairly quick yeast bread.  Plus it's 100% whole wheat!  So I decided to add it to our plans yesterday.  It wasn't quite ready in time for dinner.  But I did sample some right out of the oven at the end of my meal...my dessert :)  YUM!!  Fresh whole wheat bread directly out of the oven with a little butter (yes, I said butter...on my bread!).  So good.  A keeper recipe for sure.  I love how simple it is and that it only has to rise for 30 min.  I think I let it rise for 40.  But 30 would be fine.  Or longer would be fine too.  I wasn't 100% sure what kind of yeast to use.  So I used bread machine (I think it's often referred to as instant).  Seemed to work just fine.  I only made 1 loaf since it was my first attempt...and I've had some bad bread turnouts.  I wish now I would have made 2 :)  Oh well.  We had some more this morning as toast with our eggs.  And I used it to make Justin's sandwich for his dinner tonight.  I'll probably slice the rest and freeze some of it.  The down side of this bread is that it is not soaked, fermented, etc.  But at least it's healthy and easy to make.  A go-to recipe when you need good bread fast.  I subbed a couple ingredients.  See my comments below.

Honey Whole Wheat Bread

3 cups whole wheat flour
1 Tbsp. vital wheat gluten
2 packets of yeast (about 4 1/2 tsp.  I used bread machine/instant yeast)
2 1/2 cups warm water

In a large mixing bowl (preferably a KitchenAid), add the 3 cups flour, wheat gluten, and yeast. Stir. Add in warm water and stir until combined. Let sit for 10 minutes.

1/3 cup canola oil (I used EVOO)
1/3 cup honey (I used raw honey)
1 1/2 Tbsp. lemon juice
1 Tbsp. salt (I used fine sea salt)
3 1/2-4 cups whole wheat flour

Mix the oil, honey, lemon juice, and salt in a small bowl. Add to flour mixture after the 10 minutes. Mix until combined. Add in the additional flour and mix. Now knead the dough for ten minutes with the dough hook. When it is done divide the dough into two loaves. Make sure they are even. Shape them into loaf form. Place the dough into 2 loaf pans that have been sprayed with cooking spray (I used my olive oil  sprayer...and the bread totally stuck to the pan.  I'll butter the pan next time). Cover with a clean towel and let rise for 30 minutes (or more).

Preheat the oven to 350 degrees. After the loaves have risen, bake them for 30 minutes. They should be golden brown. Let cool before slicing, if you can wait. You can freeze one of the loaves if you wish.

  1. So glad you guys liked the bread! We love it! I'm making another batch first thing in the morning.

    I'm very interested in hearing about your sourdough experience. I've never really been a fan of sourdough bread, but I think I just never really had good sourdough bread or something. I had some homemade sourdough that someone brought into work a month or so ago and it was delicious.
