Meal Plans Week of 5-2-10

What happened to April showers bring May flowers?  It seems to be the other way around this year.  Our tulips have been out for the past few weeks but are all on their last leg now.  And yesterday we were supposed to go to Tulip Time, but it was pouring rain and storming.  We were all bummed.  But I guess it wasn't meant to be anyway.  Rebecca seems to have come down with yet another cold.  So Friday night and all day yesterday were pretty rough.  Last night was better, but still not great.  And she's already threatening to be up any minute now (before 6:30 am).  So this could be another long day.  And this will be a busy week.  Today is church (we'll see if Rebecca and I can go or not).  Justin has a meeting at church in the afternoon and has to be at evening church.  So he'll be gone most of the day.  Monday is grocery day.  Tuesday I have an appt. with my psychologist in the morning.  In the evening I'm doing an interview with a Calvin prof. about women in engineering.  Wednesday is Kindermusik.  Thursday Justin has a Dr. appt., and I'll be getting the house ready for guests again.  Friday is MOPS (last one of the year already!) in the morning and Justin's parents will be here in the evening and spending the night.  Saturday we are going to my BIL and SIL's graduation open house in Lansing.

Last week ended up being quite productive in the baking department. I made whole wheat coffee cake, cinnamon raisin bagels, crunchy granola bars, chocolate cupcakes, coconut cupcakes, breakfast cookies, graham crackers and pizza dough. I also found out on Wednesday that I had to bring muffins for a church thing today. So I searched my recipes for something I could make with what I had on hand. And ended up making a batch of pumpkin chocolate chip muffins and a batch of orange muffins. And I did finally grind my own flour!  Not too bad in one week.

For extras this week I need to finish the cupcakes for the open house on Saturday.  I need to make frosting and frost/decorate about 50 cupcakes.  That'll probably happen Friday evening.  I'm going to make some muffins today.  And I might make soft pretzels or a sweet bread.  We'll see how the week goes.

The other item on my agenda this week is placing my first co-op order!  I'm excited.

Since this week will be so busy my meals are again going to be pretty simple.  And I'm still working on using up what we have in the house.  Here's what's on the menu:

  D - mixed veggie frittata, home canned peaches, oatmeal muffins

T (make strawberry bread, Dr. appt., interview)
  B - strawberry bread, fresh pineapple, mango and strawberries
  D - hobo dinners

W
  B - strawberry bread,, fresh pineapple, mango and strawberries
  D - lentil burgers, quinoa salad, home canned peaches

Th (soak grains, make pumpkin pancakes to freeze, Justin Dr. appt., clean, prep house for guests)
  B - cereal
  D - grilled steak, baked potato, broccoli (Justin), steak salad (me)

F (MOPS, Voogts, make frosting and decorate cupcakes)
  B - chewy granola bars, fruit
  D - pork chops and apples over rice, beans (Justin), salad (me)
  snack assortment - graham crackers, vanilla wafers, fresh fruit, butterscotch bars

S (Voogts, openhouse)
  B - oatmeal muffins, breakfast cookies, fruit, cereal, toast
  L - open house in Lansing
  D - leftover lentil burgers, quinoa salad, fruit

  1. Major bummer about the cold! Hope she is over it soon!

    Yeah, hobo dinners!! I must have made you hungry for them when I asked about them. :) How are you making yours this week? I'm so excited to try them in a few weeks!

    Have a great time at the open house!! I hope the weather cooperates this weekend!!

  2. I often make hobo dinners when I need a meal with no clean up (although I guess I haven't done it lately). Tuesday I have to leave right after dinner, so hobo dinners will be perfect. And there is enough time between putting them in the oven and dinner to do any little bit of clean up from the prep. I'll probably just do the traditional dinners. Although I always add extra veggies in mine and often don't even put potato in mine...just beef and a mix of veggies.

    I hope it's nice on Saturday too, but right now it doesn't look that great.
