Meal Plans Week of 4-24-11

Christ is risen!  The Lord is risen indeed!  Happy Easter everyone!!  I pray that you all have a blessed day celebrating our risen Lord.

Last week of April!  Kind of scary.  And yet so exciting.  Last week was long and busy, but now I think I've got all the necessities done...and I'm ready for baby :)  For some reason last week seemed very long.  I think I'm just in this waiting mind frame right now.  So every day kind of drags on, even if it's a busy day.  I ended up not going to nursery cmt or the mom's night out last week.  I just was not up for it.  By about 7pm I can barely stand on my feet anymore.  But I did do pretty much everything else on my list.  I had a good OB appt. and psychologist appt. (went surprisingly well...she was happy about GAPS and said I seem very ready for this baby).  Rebecca had a great 3 year check up.  We got a lot of odds and ends done around the house.  My hospital bag is packed, the nursery is ready, the car seat is installed, the house is clean (for now), I changed everyone's sheets/washed blankets, I organized our chest freezer and got all of the grandparent/Rebecca meals set, I finalized and printed grandparent instructions, and we stocked up on diapers (yes, I am doing cloth...but that won't happen immediately.  There will be a learning curve, and we'll use disposable while I'm recovering.)  Justin had his last MBA class and finished his last bit of homework!  He even had time to do some work in the yard yesterday.  After a gloomy week the sun decided to peek out in the afternoon yesterday.  So we all went out for a while.  Justin transplanted some raspberries and strawberries.  Rebecca was a very busy girl "helping" Daddy with her new shovel and making cupcakes.  I also stayed plenty busy in the kitchen.  I made hummus, mayo, broth, almond pecan flour, almond pecan butter, crispy almonds and pecans, gf strawberry muffins, dried apples, kefir, peanut butter brownies, cinnamon raisin nut butter bread, apple raisin bars, sourdough bread, fermented punch and hot cross buns.
Thankfully this week won't be quite so busy.  But still plenty going on.  Today is church.  No big Easter plans.  Just taking it easy (since that's about all I can do right now :P).  Monday is our last day of gymnastics!!!  I am beyond excited about that.  I'm glad we tried it.  But I think Rebecca and I are both ready to be done.  Not sure my body could manage one more week of it.  I also have to go to Harvest Health.  Tuesday is grocery shopping...and NO CLASS!  That will be strange.  Wednesday is Kindermusik and another OB check up.  Thursday I'll probably make a quick run to Target and Heffron Farms to stock up on a few things.  No plans for Friday or Saturday.  Probably just more odds and ends last minute baby prep.  Hopefully we'll have some nicer weather this week and we can get outside a bit.

Not too much planned in the kitchen this week.  I'll make another batch of hummus to have for lunches.  I want to try another grain free muffin recipe and maybe some grain free pancakes to use as buns/bread.  If time allows I might make more peanut butter fudge or try making saurkraut.  It is one of the main fermented foods recommended for GAPS.  So it would be good to have on hand.  We'll see.

Now that I'm down to the last 2 weeks before baby I really want to eat as well as possible.  So I'll really be focusing on having plenty of broth and plenty of probiotics.  Plus just generally eating gut-friendly food.  I confirmed last week that nightshades do not agree with me yet.  I think they cause too much inflamation.  I had peppers a couple days in a row...and then a few pretty bad days.  Since working through those I've been doing pretty well.  Hoping to keep it that way :)  I've been trying to drink broth or have a little kefir before most meals to help with digestion.  I've also found that I like raw egg yolks...plain.  For the last month I've been mixing them into things daily (I eat 1 or 2 every day).  This week I tried taking a bite plain.  And as I expected, it's like eating a fried egg :)  I bet I could put a few yolks in a dish with a little sprinkle of salt and eat it just fine.  And it's a very easy way to get tons of nutrition.

I have passed the 37 week mark...officially full term!!  That is very exciting.  I want the baby to stay put until my scheduled c-section.  But I I'm sure it will be a long 2 week wait for that.  The swelling is very bad.  Most of the time my ankles feel sore and bruised.  I hardly have anything that fist anymore because my belly is so big (Justin literally about gasped when he saw my bare belly last night :\).  I'm just all around very uncomfortable.  But I guess it's a small price to pay for a child :)  I'm doing my best to put my feet up a few times a day and take a nap most days since I don't sleep that well at night.  15 days and counting.

Speaking of, this is National Infertility Awareness Week!  I'm hoping to do a post on it later this week.

Well, on with the meal plans for this week.  Tonight's dinner is kind of a modified seder meal.  I know it's normall done on Thursday.  But we'll do it tonight.  If you want to read more about the details of a seder meal check out this post.  Here's what's on the menu.

  D - coconut fried white fish, beans, baked potato

T (prep smoothies, make sauerkraut, iron, Meijer - stock up)
  B - kefir smoothie leftover fish, avocado (me), french toast (Justin)
  D - pork chops w/ apples over rice, peas hamburger corn bake (modified version), peaches (Justin), beef veggie soup gf apple cinna-muffins (me)

W (chop fruit and veggies, KM, Dr. E.)
  B - fried eggs, toast, avocado
  D - leftover hamburger corn bake, applesauce (Justin), beef veggie soup, gf apple cinna-muffins (me)

Th (misc. kitchen cleaning, Target/HF, make broth)
  B - scrambled eggs, toast, avocado
  D - roasted chx, roasted asparagus, roasted potatoes

F (clean, make gf bread, make mayo, freeze butter)
  B - chx soup (me), granola/puffed rice w/ milk (Justin)
  D - cashew avocado chicken salad w/ raw cheddar on gf bread, broccoli

S (clean office, laundry)
  B - coconut bread, avocado w/ egg yolk (me), sd english muffin, pineapple (Justin)
  D - grilled steak, roasted brussels sprouts, roasted potatoes

  1. Ham for a seder meal? Pork in any form would be considered unclean - esus would not have eaten it. Passover looks back to the blood of the lamb that was applied to the doorposts, and Jesus is the Lamb of God, another reason not to eat pig on such a day. (Of course, in our house, we eat Biblically clean and would not eat ham or any form of pork or shellfish at any occasion)

  2. I'm using what we have on hand. It's about the concept, not the actual food. We don't think of food as clean/unclean.

  3. Glad to hear your psychologist was supportive of GAPS and it was a good appt.

    You guys only had sun in the afternoon yesterday? We had an awesome sunny day all day here yesterday. In Lansing, too. Kevin and Danny are both sunburnt from the car show in East Lansing that they went to in the morning and were home in the early afternoon. Its so fun to have the little ones help with garden work, isn't it? Its amazing what great little helpers they already are at such a young age. Carson did his fair share yesterday, helping us dig and then fill in the holes when we planted the trees. He is so proud of himself, too. I'm sure Rebecca is as well. :)

    I read some where a couple of weeks ago that April is National Infertility Awareness Month. Even better than a week!
