Green Smoothie (dairy free, grain free, GAPS-legal)

I love smoothies.  And they are so handy for lunches when I'm trying to juggle 2 kids (playing, feeding, etc.).  I can easily "eat" them one handed, and I can pack a lot of nutrition in them.  Up until now I've made my smoothies with yogurt and/or kefir.  But lately I'm losing the battle with dairy.  And it seems to bother Abram as well.  So I'm experimenting with dairy free smoothies.  I decided to try using nuts in my smoothie to thicken it and then add water.  It's basically like using nut milk instead of a dairy base.  And it works!  I am amazed at how thick the smoothie is with no kefir or yogurt.  The other key ingredient is avocado.  I always put avocados in our smoothies.  It makes a huge difference in how thick it is.  Even just a 1/4 of an avocado can thicken up a full blender.  So yesterday I made a "green" smoothie.  It was pretty good.  I still have to play around a bit with ratios and maybe try it with some fruit added.  But this was the very basic version.  I'll put quantities in parenthesis for now since I'm still experimenting.  I'll update as I play around.  If you can tolerate coconut oil that would be very good added to this as well.

This is basically my typical lunch blended up together.  I often eat avocado w/ egg yolk on top and then munch on some nuts or grain free granola.  Now I can drink it :)  You can even make a big batch, pour it into several glasses (stored in the refrigerator) and have it prepped for several days.  Just grab and go.  Very handy for a busy mom.  This works well for breakfast, lunch or a snack.

Green Dairy Free Smoothie
(base recipe)
Water (1/2 cup)
Crispy nuts (small handful)*
Avocado (1/2 of a small avocado)
Egg yolks (2)
Honey (2 Tbsp.)
(coconut oil, liquid - optional)
(vanilla extract - optional)

Blend all in blender until smooth.  Add water if too thick.  Enjoy!

*If you don't have any crispy nuts on hand you can use soaked nuts (w/o drying them) or a little bit of homemade crispy nut butter.

Edited 7/19/11 - I made a blueberry version today with fresh blue crop blueberries.  YUM!!!!  I did blueberries, 2 egg yolks, 1/2 small avocado, water, little squirt of honey and a small handful of crispy almonds and pecans.  It's more blue-green :)
