Cheeseburger Zucchini/Pepper Boats (dairy free, egg free, nut gree, grain free, GAPS-legal)

It's that time of year...when you're trying to think of what else you can make with zucchini.  We're getting some nice zucchini and summer squash from our garden (but honestly not nearly as many as I'd like...just enough to eat, but none to freeze so far).  So I've been trying to include them in our meals in creative ways.  Last night I made cheeseburger zucchini boats.  This is really more of a concept than a recipe.  There are so many ways you can make it.  Heavenly Homemakers has a recipe where you cook everything first and then assemble.  I'm a fan of assembling and then baking it all together.  My SIL posted a recipe for zucchini boats that shows lots of different combos too.  Last night I did cheeseburger.  I mixed ground beef with ketchup, mustard, salt and garlic powder.  Then topped things with cheese (not mine).  I think that ground turkey or chicken mixed with pesto would be really good.  I'll have to try that sometime.  I made this with zucchini, summer squash and pepper.  Rebecca isn't a fan of zucchini or summer squash, but she loves peppers.  So that one was hers.  She ate everything on her plate :)  Well, except for the sweet corn.  She usually eats about 3 bites of that before she's done.  I know, my crazy kid that doesn't care much for sweet corn.  Justin was apprehensive when he saw what I was putting in the oven.  And was already checking to see what else we were having/if he would get enough to eat...or if he could just eat corn for dinner.  But after a couple bites he told me how much he liked it.  And proceeded to clear his plate as well.  So they must not be too bad :)  If I can get Justin to eat an entire half of a zucchini it's got to be good.  I love them.  And I'm looking forward to the leftovers.  Here is the basic recipe.  But you can really use any filling (and a variety of veggies too) you like.  These can be prepped ahead and then baked when needed.  And it is a great all-in-one meal.  You get your meat and veggies together.  I did serve extra veggies with ours, but you don't have to.
Cheeseburger Zucchini Boats

2 - 3 medium zucchinis (or summer squash or peppers)
1 lb. ground beef (or any other ground meat)
salt, garlic powder to taste
1/3 cup ketchup
2 Tbsp. mustard
cheese (any variety you like...and as much as you like...optional...dairy free without.  I used raw cheddar.)

Cut zucchini in half lengthwise.  Scrape out seeds to make a "boat."  Place in baking dish.  Mix ground beef with ketchup, mustard and seasoning.  Put beef mixture into the zucchini.  Grate cheese over top (you could also mix cheese into the beef mixture if you like it cheesier).  Bake at 375 for 30 - 40 min.  Serve with extra ketchup for dipping.

  1. Glad they were a hit with everyone! I remember Kevin having a similar reaction the first time I made them a few years ago. :) He also learned how good they are and really likes them a lot.
