Flourless (GF) Peanut Butter Bars

I was browsing the Heavenly Homemakers recipes on Saturday and came across a flourless/gluten free recipe for peanut butter bars/cookies.  Looked so simple and good.  So Rebecca and I gave them a try yesterday.  So easy!  She could practically make them herself :P  And so good!  I love that these are grain free.  Then I can have a little and not worry about getting too many grains in my diet.  Plus they are mostly peanut butter.  So you're actually getting some decent protein when you snack on them.  And by making them into bars it only took a few minutes to prep.  Measure, mix, spread and bake.  The only problem I had is that they seem a little crumbly.  I think next time I'll use 2 eggs instead of 1.  Other than that they are great!  I used mini kisses in these.  That's what we had on hand/what Rebecca chose.  And I know we added more than 1/2 cup...Rebecca was in charge of adding them ;)  I did cut her off before she added the whole bag at least.
Flourless Peanut Butter Bars

1 cup organic brown cane sugar, sucanat or coconut sugar
1 cup peanut butter (natural)
2 eggs
chocolate chips or chocolate stars…depending on how you want to make them

Mix the brown sugar, peanut butter and eggs together.

For bars, stir in about 1/2 cup chocolate chips, spread mixture into a 9×9 pan and bake for 20 minutes at 350 degrees.

Cookies:

For cookies, place a small scoop into a mini muffin paper (using a mini muffin pan), put a chocolate star in the middle of each and bake at 350 degrees for 10-12 minutes.

  2. Hi Mary, I am your Aunt Lynette's sister and Jessica Waite's M-I-L. I am enjoying your blog and it has been very helpful. I went sugar free, dairy free and gluten free the day after Easter. I have used the Organic Pure Cane sugar in recipes so I am hoping this Sucanat will be fine too. Thanks I'm craving me some sweets!

    Sucanat works very well. Honey and maple syrup are my favorite sweeteners :)
