We're in the home stretch now. Last full week before the Christmas festivities begin! Which means there is a lot to get done this week. Last week was another productive week. I used up more apples by making dried apple slices. Rebecca LOVES them. We like them too. And it's an easy, healthy snack to have on hand. I have about a gallon bag full of them now. Only a handful of apples left in the fridge. So I'm saying I accomplished my goal of using up apples. I might still do some baking with a few. We'll see. I did get some Christmas shopping and present wrapping done. And I finished Christmas cards. We got our tree yesterday and put up some decorations. We'll decorate the tree today. And we made Christmas cookies and a bunch of chocolate (both white and semi-sweet) covered pretzels. Mmmm :)
This week there is quite a bit going on. We'll see how much we end up doing, though. Depends whether or not Rebecca is sick. She's had a fever the last couple days. But other than that doesn't seem too sick. It could be a mild cold. Or it could just be teething. Who knows. Not sure if we'll be going to church this morning...I wouldn't want to get other kids sick. Tomorrow Justin has council and I have nursery cmt. So all 3 of us will be at church in the evening. We'll need an easy clean up, early dinner. Tues. is groceries. Wed. is Kindermusik and possibly Christmas shopping. Thursday I might go shopping, and I have to get my thyroid rechecked. Friday is MOPS. Saturday is baking and getting ready to travel on Sunday. I also have to do some major planning this week...planning food for each Christmas party, making packing lists, etc.
For extras I'll need to make something for next Sunday...my nephew is getting baptized and there will be a potluck afterwards. Not sure I'll have time for much more than that. I'll mostly be focusing on shopping, wrapping and getting ready for the next 2 weeks.
And I'm pretty sure now that Rebecca and I won't be going to church today. She's already up...at 6:30 am. She's never up this early. I'd better wrap this up!
***So, I just remembered that Justin is done with class for the semester...so I need to plan a meal for Thursday! Oops. I'll have to think about that and update later. Although I love having Justin home every day it is nice to have one night a week that I don't have to cook a real meal...just find misc. stuff for Rebecca and me...and I'm able to stay out longer in the afternoon since I don't have to get home to cook dinner. We'll be back to that in a few weeks. I'll enjoy our family time for now. And we won't be home the next 2 Thursdays anyway :P

S - (church, decorate tree, plan party foods, wrap presents) - crockpot applesauce chicken w/ veggies over rice (lunch); leftover corn dog muffins, fries, broccoli (Justin), salad (me) (dinner)
M - (shopping, council/nursery cmt - early) - chili in the crockpot and cornbread (muffins from freezer)
T - (Meijer) - pumpkin muffins and mixed fruit (breakfast); turkey burgers, roasted veggies
W - (KM, baking) - baked potatoes topped w/ chili and veggies
Th - (shopping, thyroid check) - pea soup and homemade soft pretzels
F - (MOPS) - leftover turkey burgers, veggies
S - (pack, make food for baptism) - leftover pea soup and soft pretzels
Great meals again! I need to try the applesauce chicken still... I always forget about it, though.
ReplyDeleteI need to figure out what I want to bring to all the parties, still, too. All I know is what I'm bringing to Christmas Eve (taco salad) b/c we figured out our menu at my Grandpa's bday party before Thanksgiving. I'm not going to make roasted veggies for Christmas Day. I love them, too, and I know your mom liked them a lot, but the only people who ate them were Julie, your mom, and me when I made them for Thanksgiving... and I'd made a TON of them... 4 large cookie sheets full of them! Plus, it doesn't really work well with having a few hours between cooking them and eating them for dinner. I think I'll make a big green veggie-filled salad, but not sure what my hot dish will be... something in the crockpot. And I'm not sure what I want to make for the 26th yet, either. Need to give it more thought this week for sure. I still need to figure out what I want to bring to the potluck for baptism, too... do you know what you're going to make?
Ok, so I think I figured out what I'll bring for Christmas day... scratch the salad - I remember now your mom said Gretchen was bringing one. I'm definitely going to be using my crockpots since otherwise there would be such a long time between cook time and serve time. And I don't want to do potatoes since I'm trying to limit my potato intake. So I'm going to do a healthified version of green bean casserole, and also cheesy corn and peppers. And possibly a broccoli-rice casserole. That should be plenty of hot sides to choose from... and still a good variety of veggies.

The applesauce chicken is great. So easy. I adjust it to fit our needs...I add the veggies right in with the chicken. And I added a few chopped apples today...they pretty much turn to applesauce anyway...and I get to use a few more apples. Today I used chicken legs. Yum!
ReplyDeleteI am bringing a dessert or two to the VH party. I might do a cheesecake. Maybe something with apples. Not sure yet. I'm also not sure about baptism. I was thinking of doing a dessert for that as well...maybe apple crisp. Maybe pumpkin cheese pie. Julie had mentioned a cake, but I don't have time for that this week. Else I could do some kind of jello salad. Those are great for potlucks. And Justin loves them. It's just harder to travel with it...and keep it cool. We'll see. Your hot sides sound great!!! I don't think you need to do that much, though. Looking forward to trying whatever you decide to make.
Yeah, I think I'll just do the first two... green beans and corn/peppers. Your mom said I had hot sides, so I wanted to bring a couple at least. She's got the ham, Julie has appetizers, Gretchen has salads, and you have desserts. Cheesecake sounds so good, so does pumpkin cheese pie! Yum! :)
