A couple weeks ago my friend Gretchen served some coffee cake when Rebecca and I were visiting. It was so good! I got the recipe and decided to make it for our breakfast tomorrow (w/ Justin's parents). Rebecca and I made it on Monday. We ate part of it and froze the rest. So good!!! Rebecca absolutely loves it. Justin and I had some for breakfast earlier this week. A great cinnamon coffee cake. I'm sure our guests will like it too.
Yum Yum Coffee Cake2 cups flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
3/4 cup butter
2 eggs
1 cup sour cream or buttermilk (I used light sour cream)
1 cup sugar
1 tsp. vanilla
Topping:
1/3 cup brown sugar
2 tsp. cinnamon
1/4 cup sugar
1/2 cup nutmeats (optional)
Heat oven to 350 deg. Grease a 9x13 pan. Mix topping ingredients, set aside. Sift flour, baking powder, baking soda and salt. In a separate, large bowl cream the butter and sugar. Add the eggs, one at a time. Beat well. Add vanilla and mix. Add dry ingredients alternately with cream, beginning and ending with dry ingredients. Put half of the batter in the prepared pan. Top with half of topping. Spread the rest of the batter on top. Top with remaining topping. Bake 35-40 min.
Serve warm or room temperature. Freezes well.
I have a recipe called Yum-Yum Coffee Cake, too. I wonder if its the same one. I love coffee cake! I never thought of freezing it, though - great idea!
