Time for a recap already? Let's see how I did this month...
Cakes - got them done and they turned out really well! Now I get a little break. I'll probably make a cake or cupcakes next week to use up frosting and to celebrate my birthday :)
Quick and easy meals - I think I accomplished this. I don't feel like I spent too much time in the kitchen cooking dinner...just making other things :) I used my crockpot quite a bit. And I even managed to try some new recipes.
Beans - I did finally cook all of the beans we grew in our garden and some that I had bought a while back. I wasn't able to can them, but I do have 7 bags of white beans in the freezer now. I've also been using beans a lot in our meals lately. And I'm starting to use dried beans more often. I'm hoping to stock up on more dried beans at the health food store this week.
Baking - I did quite a few baking projects this month - crispy cheese crackers, homemade bagels, granola, whole wheat bread, graham crackers, vanilla wafers and cinnamon applesauce muffins. There are probably more, but I can't think of them at the moment.
Breakfast other than cereal - We've been having at least a couple different breakfasts every week this month. Next month I'll work on it even more.
Self feeding with spoon for Rebecca - Rebecca has become quite proficient at using spoons...as long as she's not distracted :P If something catches her attention she might turn the spoon without realizing it, but otherwise she's pretty good at it. It's nice that she can feed herself just about anything now. She likes it too :)
Potty training research - I did read up on potty training a bit. And we checked out some books from the library for Rebecca. She loves them! And it has really helped her grasp the concept of the potty. Now I feel like we're ready to keep moving. More on that tomorrow.
Finally, in terms of my ongoing personal goals Justin and I managed to go out together last week. It was a belated Valentine's Day dinner. We had such a good time. It was nice to have great, uninterrupted conversation. We actually almost lost track of time! Hopefully we will continue to make this a priority.
Plenty of stuff squeezed in this month. I think I met all of my goals. Tomorrow I'll be posting my goals for March. It will be even more packed than February. Check back tomorrow for all of the details.
