The start of a new week, the end of another month. This will be a fairly busy week. I have a lot of errands and projects I want to squeeze in. Now that we're all healthy again I'm anxious to get things done.
Last week I did make bagels and granola. But only a batch of granola for Rebecca. When we went to make it I realized I hardly had any oats in the house. I got some more yesterday, so maybe we'll make a big batch of granola today. This was my first time making Rebecca some granola...she LOVES it. She wants to munch on it all the time. I did a very simple version for her - oats, wheat bran, coconut and raisins. She likes it plain or with milk. I'm so excited that she's old enough to eat granola now :) For extras this week I want to make a large batch of granola for Justin and me and some bread. If time allows I might attempt english muffins. And we're almost out of grahams again. So maybe Rebecca and I will make a batch some afternoon.
For outings I have Meijer on Monday, I'm visiting a friend on Tuesday (we were supposed to go last week but we were too sick) and Justin has an all afternoon/evening event with work, we have Kindermusik on Wednesday and Justin has worship team (which means early dinner), Thursday I'd like to make a run to Harvest Health to stock up on a few things I can't get at Meijer and Friday is MOPS. I think that will keep us plenty busy.
Here are the meals for the week:
S - (church, make granola) - homemade bagel, apple (breakfast), crockpot white bean and sausage soup, cornbread (lunch); leftover homemade pizza (dinner)
M - (Meijer, make grahams) - pumpkin muffins, frozen fruit (breakfast), roast chicken (trying our first whole chicken from the meat market) , mustard roasted potatoes, beans (dinner)
T - (visit friend, make bread, Justin out to dinner w/ work, meatless) - homemade bagel, orange (breakfast), pizza and salad
W - (KM, meat market, WT, early dinner) - cashew avocado chicken salad sandwich, carrot sticks, pear slices
Th - (HH, class) - yogurt, homemade granola, frozen blueberries and raspberries (breakfast), salad (dinner)
F - (MOPS, clean) - yogurt, homemade granola, blueberries and raspberries (breakfast), ham, broccoli and spinach quiche, bread pudding, pearsauce (dinner) (didn't think of it until just now, but I guess this is kind of like green eggs and ham...fitting for Dr. Seuss' birthday!!)
S - (laundry, make english muffins) - leftover quiche, bread pudding, fruit
Great meals! I always forget about that avocado cashew chicken salad - I've wanted to make it since you posted it. I'll have to make it when Kevin is in Lafayette, maybe, since he wouldn't eat it anyway.
