Chicken Pepper Parmesan Pesto Panini

This month one of my food goals is sandwiches.  I came up with an idea for a panini that I tried last night.  Wow, is this good!!!  Justin was sad that I had only made one for him :P  Even Rebecca ate all of hers and was asking for more...although hers was not the full recipe (just some pesto, chicken and cheese).  This is super simple and so good.  And really healthy...I used all homemade and organic food.  I'll definitely make this again.  And maybe I'll start experimenting with more paninis.  A yummy, quick, easy meal.  I'll post the ingredients and how to assemble.  There aren't any quantities...just make it to your liking, see how much fits on the bread :)

Chicken Pepper Parmesan Pesto Panini

Bread (I used homemade whole wheat) (2 slices per sandwich) (this can be GF if you have GF bread...or you could use corn tortillas instead of bread)
Prepared pesto (I used homemade basil pesto...from the freezer)
Cooked chicken (I used leftover cooked chicken breast...broken into small chunks)
Roasted red peppers (I used organic)
Parmesan cheese, sliced (I used  both parmesan and some organic meunster)

(Instructions for 1 sandwich...repeat for as many as you need)

Spread pesto on both slices of bread.  One on slice layer slices of parmesan, roasted pepper, chicken and another layer of cheese (parmesan or another kind).  Top with other slice of bread.  Spread butter or spray butter spray on outside of sandwich.  Cook on panini grill or George Foreman grill (I used our GF grill...paninis are about the only thing I use it for :).  If you don't have either you can use a grill pan or just a skillet/griddle.

  1. Yum! I make paninis for lunch on the weekends quite often, a couple times per month at least. We love them, too!
