For breakfast this morning I made some new muffins. This is another Heavenly Homemakers recipe. Super quick and easy to make. All in one bowl, no mixer, no big mess :) And I have lots of fresh oranges right now, so it worked really well. These are really good. And quite healthy. Justin and I both enjoyed them this morning. I only got 8 muffins out of this. If I make them again I'll probably do a double batch. There really wasn't much of an orange flavor to them. I was surprised. Next time I'll add a little more orange zest I think. And I bet a simple orange glaze would be really good too. Definitely a keeper recipe and an easy breakfast. I got to try my new silicon muffin cups today. Wow those work great! The muffin just lifted right out. No mess. No fuss. And no paper to throw away...very earth friendly :) You actually don't even need to use a muffin pan with them either. I'll have to try that next time. I'm all for not having to wash muffin pans :)
Orange Muffins
1 1/2 cups whole wheat flour
1 tsp. baking powder
1/2 tsp. salt
1/3 cup honey
1 egg
1/4 cup butter, melted
The juice of one freshly squeezed orange
1/2 tsp. grated orange rind
1/2 cup milk
Mix dry ingredients together. Make a “well” in the center. Add honey, egg, melted butter, orange juice, orange rind and milk. Stir until just combined. Bake in muffin paper lined muffin tins for 20 minutes at 400 degrees.
