I'm still figuring out this whole GAPS thing. And what works and doesn't for me. I'm sure it will take a long time to figure it out. I've been especially struggling lately with a 7 1/2 lb. baby taking up all of the space in my belly :P Since that makes nothing work. So I was doing some browsing on the GAPS website to try to get advice. It has a wonderful FAQ page. And both there and in the GAPS book I read about dairy and constipation. For constipation high fat (butter, ghee and sour cream) and not high protein (whey, yogurt, kefir) dairy is recommended. I eat a ton of the high protein...but not the high fat :\ I've been a yogurt addict since high school. Guess that's one mistake I've been making for a while. So now my question, how can I get more of the high fat dairy in? I don't eat that many things that I can put butter on...just some veggies and an occasional gf baked good. I read on there about mixing butter and honey. So I figured I'd give it a try. Eating butter plain instead of on something...a new experiment for me :P But...it's very good! I'm sure not everyone could eat this. But I think it's good. Over the last few months I've grown very fond of butter. I mixed a little soft butter and honey together...and ate it. Kind of tastes like a soft buttery fudge/toffee. Then just to experiment I added a pinch of cocoa. That's good too!! I've found a new snack...and a new way to get high fat dairy into my diet. I made this with soft butter and ate it right away. I'll have to experiment with putting it in the fridge and eating it hardened. Maybe that will taste even more like fudge. And a little peanut butter mixed in would be good too. I think I need to do some tasty experimenting :) I've been struggling lately to figure out snacks that are not going to upset my tummy. And this is a great one when I just need something little. Eating plenty of fat curbs sugar cravings and helps digestion. Plus it feels like a real treat! Bring on the butter :) This isn't much of a recipe. But I'll write down a very small scale version. Not much for pictures, but not much you can do with a Tbsp. of butter :P
Sweet Butter Treat
1 Tbsp. softened butter
1 tsp. raw honey
pinch organic cocoa (optional)
Mix all ingredients. Eat immediately or put in refrigerator to harden.
Mmmm! Honey butter is awesome! Its great with a little cinnamon mixed in, too.
