Peanut Butter Popcorn

Last night for dinner one of our fun foods was peanut butter popcorn.  I got the recipe from a link on Frugal Granola.  The actual recipe comes from Food dot com.  This was very easy and very good!!  We all loved it.  You just have to be sure to not eat too much :P  It's not something you should all the time.  But it is a great treat.  The original recipe uses some not so good ingredients.  And I think you could do with less topping than they suggest.  I'll post it as I made it.

The other thing I did yesterday was make a great batch of popcorn...without burning any!!!  Thanks so much to Christy (a fellow West MI blogging mom) for her great tutorial.  Now that I learned how to make great popcorn I'm excited to make it more often and experiment with even more flavors.  So far I've done caramel corn, kettle corn and peanut butter popcorn.
Peanut Butter Popcorn
makes 5-8 cups

1/3 cup honey or maple syrup (I used a combo of the two.  The syrup helped thin it out a bit.) 
1/4 cup sucanat or cane sugar
1/4 cup natural peanut butter
1/2 tsp. vanilla
5 -8 cups popped popcorn

Make popcorn and place in a bowl.  In small pan melt together honey, syrup, sugar and peanut butter.  Remove from heat and stir in vanilla. Stir mixture over popcorn.

I served it in a large bowl and stored the leftovers in a plastic bag.  Makes a great grab 'n' go snack :)

Coconut oil
Organic popcorn

Melt coconut oil in 3 qt. sauce pan (enough to cover bottom of pan).  Add enough popcorn to cover bottom of pan.  Put the lid on the pan.  Keep heat at medium.  Let cook until all popcorn has popped.  No need to shake the pan.  Add desired toppings.  Enjoy!
